During the so-called vacuum distillation, the alcohol contained in the wine gently evaporates in stainless steel funnels at 30° Celsius. The initially dissolved bouquet notes, i.e., the volatile but flavor-giving substances of the wine, are collected and stored separately so that the alcohol can then completely evaporate, resulting in a final product with 0.0% alcohol. The dealcoholized rosé wine is then reintroduced to its natural bouquet unchanged, which makes the authentic taste possible.
