The Spätburgunder vines from French clones stand between 160 and 240 meters above sea level on barren soils characterized by limestone and rugged rock. Here, the vines have to fight for water and minerals and root deeply into the Steinacker. Canopy management is also important for the quality of the wine: double shoots are manually removed, and depending on the weather, the grapes are defoliated and thinned out to aerate them. The Spätburgunder grapes are harvested by hand at the optimal time and then selected again and destemmed, 15% are pressed as whole bunches. The yield is 4,200 L\/Ha. The grapes are transferred to wooden fermentation vats without pumping, where natural yeasts are allowed to work and initiate spontaneous fermentation after a short maceration period. The aging takes place in used barriques (second and third filling). After 16 months on the lees, the Spätburgunder is bottled unfiltered without fining, enzymes, or other aids. Both sites are characterized by their east-south orientation and by the skeletal, fast-warming soils. Perfect conditions for this heat-loving Rhône grape variety.
