The wines are honest, natural and young, like the people who make them.\u003c\/p\u003e\n\u003ch3\u003eWine from Sicily – from the foot of Etna\u003c\/h3\u003e\n\u003cp\u003eThe Vini Campisi winery is located between Noto and Pachino, in the very south of the Italian island of Sicily. On seven hectares of vineyards, grape varieties such as Nero d’Avola, Syrah and Grillo are cultivated on soils of volcanic origin according to biodynamic principles, out of respect for Mother Nature. Thanks to the constant sea breeze and the favorable climatic conditions, even the use of organic pesticides is hardly necessary. For the fermentation and storage of their wines, they use temperature-controlled stainless steel tanks of various sizes. Fermentation takes place spontaneously with natural yeasts. After a maceration of about 10 days, the must is gently pressed and the young wine undergoes malolactic fermentation. Aging takes place in stainless steel tanks with argon as an inert gas. The SO2 levels in the wines are kept quite low, so they only add a little sulfur at bottling. Both in the vineyard and in the cellar, the lunar calendar is observed.
