The Grüner Veltliner was harvested in mid-September on September 30, October 1, and October 11, 2022 – hand-picked selectively in small 20kg crates. After a short maceration, whole-bunch pressing took place, followed by spontaneous fermentation in equal parts in used oak barrels and stainless steel tanks. The aging also took place in equal parts in large, neutral oak barrels and stainless steel, first for 6 months on the full lees and another 4 months on the fine lees, before it was bottled for the first time at the end of August 2023. The vines are between 15 and 45 years old. The interplay of climate and soil in the Danube region forms the basis for the character of the Loimer wines. Outcrops of the Pannonian, continental climate bring hot, dry days to the area. Cool air currents from the higher-lying Waldviertel mix and \"spice\" the up to 38°C hot air. The soils are equally unique and ideal for viticulture: on the one hand, maritime sediments are found here. On the other hand, there is loess, windblown dust from the ice age, which has compacted into fertile soil.\u003c\/p\u003e\n\u003cp\u003eThe Grüner Veltliner was harvested at the beginning of October 2020 – naturally by hand, selectively in small 20kg crates. Half was fermented with stems with subsequent maceration at 8°C for 5 days, the other half without stems as whole berries spontaneously fermented on the mash for eight days. Subsequently, the Grüner Veltliner mit Achtung was fermented in 300 and 1250 liter barrels. The Anninger, a mountain at the foot of which the vineyards for this Pinot Noir are located, is one of the eastern foothills of the Alps, standing at 700m. The vines grow on clayey, calcareous sedimentary soils mixed with limestone gravel. The Pinot Noir was harvested at the end of September 2015 – of course by hand, selectively in small 20kg crates. 80% was crushed with stems, 20% whole berries were pressed gently. Fermented spontaneously in used 2,200l wooden fermentation vats. Biologically working winemakers were therefore very challenged in vineyard management. The unusually warm, sunny, and dry September finally ensured a harmonious end to the wine year. It helped the grapes achieve very good ripeness. The cooler nights at the end of the month led to optimal aroma development.
