The thick-skinned berries are greenish-yellow to red in color, which largely depends on sun exposure, and ripen late and very unevenly. Their juice is translucent. Yield reduction is absolutely necessary, as Roter Veltliner is extremely high-yielding and would only produce thin, expressionless wines if left untrimmed. However, if it has an optimal location with perfect soils, as is the case with the Eisenhut from Nimmervoll winery, is cared for in the vineyard, thrives healthily, and is properly pruned for yield, Roter Veltliner produces extract-rich, aromatic wines with good acid structure, enormous development potential, and long aging capacity.
