Grapes from a young plot in the Nackenheimer Rothenberg and an approx. 40-year-old plot in the Hipping ensure an exciting interplay between character wine and drinking pleasure.\u003c\/p\u003e\n\u003cp\u003eBoth vineyards are cultivated close to nature, carefully processed, and maintained. Gentle pruning, natural fertilization, yield reduction through grape splitting and thinning, selective, manual harvesting in several passes are obligatory here. Fermentation takes place at controlled temperatures in stainless steel tanks. The wines remain on the fine lees until spring, which gives the wines stability and good aging potential and supports the development of aromas.
