Traditional, because the original recipe is prepared with wine. Thus, Crudo's crispy Tarallini Casarecci are perfect companions to a glass of wine, cheese, salami, ham or antipasti. Of course, they also taste great with beer or a non-alcoholic accompaniment.

Taralli – first boiled - then baked

First, a dough is made from whole wheat flour, which provides the slightly nutty-spicy taste, extra virgin olive oil from the Schiralli oil mill, white wine and salt. This must rest sufficiently before small, round rings are painstakingly formed from the dough by hand. These then take a bath in boiling hot salt water before being baked. Similar to gnocchi or dumplings, they are ready when they rise to the surface. It is precisely this manufacturing method, which has been used by Italy's "nonnas" for decades, that is crucial for the smooth, super crispy surface of the bread specialty Taralli.

Crudo Taralli – with olive oil from Apulia

The Schiralli family owns about 20 hectares of olive groves in southern Italy, in Apulia, at the foot of the Barese Murgia. This scenically charming region, only 12 km from the sea, is characterized by semi-rocky terrain, which, due to longer and intense sun exposure and the beneficial effect of the rising wind, offers optimal conditions for olive cultivation.

The Schiralli family, or rather the Schiralli brothers, market their extra virgin olive oil from typical Apulian olive varieties under the brand Crudo - which means raw and is an allusion to the completely innovative processing technology, which is the result of many years of experience of the manufacturer of extraction machines, the Tuscan company Mori. Both Crudo and Sei Cinque Zero are monocultivar olive oils, Crudo from Ogliarola, Sei Cinque Zero from Coratina, while Culto is produced from a blend of different Apulian varieties. The olive oils from Olearia Schiralli have been awarded several times, including by Der Feinschmecker. The Crudo olive oil is the Feinschmecker Olio Award winner 2023 in the light fruity category.

//cdn.shopify.com/s/files/1/0998/4960/1350/files/crudo-taralli-caserecci-200g_fe39ce6c-308b-49a2-a01e-0cd4d635bfd0.jpg?v=1776146309
