The mustard seeds are soaked for two hours before being crushed and combined with homemade vinegar to become Moutarde aux Figues. This step, as well as the refinement with a relatively high proportion of 18.5% figs, allows a flavorful mustard to mature that is completely natural and free of preservatives.\u003c\/p\u003e\n\u003ch2\u003eWhat dishes does fig mustard pair well with?\u003c\/h2\u003e\n\u003cp\u003eFrench fig mustard adds a fruity sweet and spicy note to meats such as lamb and chicken. The medium-spicy mustard with figs refines salads and goes wonderfully with goat cheese or feta. For a perfect vinaigrette (one teaspoon mustard, one tablespoon vinegar, three tablespoons oil, salt and freshly ground pepper) as well as for marinades and for seasoning sauces, this fig mustard is simply indispensable. In 1940, his son Pierre Delouis took over the management of the award-winning company, and after his departure, his son Philippe, thereby truly living up to the name Delouis Fils - Delouis and Sons. Philippe thought that anyone who successfully produces vinegar could also produce mustard and mayonnaise, and so in 1976 he founded a mustard factory in Champsac, a small municipality in the Périgord-Limousin Regional Natural Park in France, not far from Limoges.\u003c\/p\u003e\n\u003cp\u003eHere in a rural environment, the company Delouis Fils S.A. has since produced mustard with promising success. Driven by this, Philippe Delouis expanded his production with several new product lines such as salad dressings and sauces. Today, 55 employees work in the manufactory and, with special care and great skill, produce mustard and sauces from the best quality raw materials.
