Clearly, even with the Spruce Shoot Spirit, distiller Florian has come up with something extraordinary. For his spirit, he uses young spruce shoots, also known as May tips, hand-picked in the Black Forest in early summer.\u003c\/p\u003e\n\u003ch4\u003eSpirit instead of Brandy – Florian explains it\u003c\/h4\u003e\n\u003cp\u003eA spirit made from spruce shoots is not a brandy, but a spirit. \"A spirit,\" Florian explains to us, \"opens up possibilities for the distiller to do known things differently and to play with the unknown.\" Unlike brandy, Florian therefore uses ingredients that cannot be mashed and fermented due to their low sugar content, such as the spruce shoots from Bad Peterstal. \"Here we take a piece of nature,\" Florian continues, \"soak it in the purest grain alcohol so that it can release its full aroma into the alcohol, and distill the 'flirt' after a short time. This way, only clear notes get into the distillate. What we save in time, we add in fruits or, as here, in botanicals.\" With the good, soft water of the Black Forest, the spirit is then reduced to drinking strength (42% vol. alcohol), filled into classic 500ml bottles without the addition of sugar or coloring agents and without cold filtration. \"The result: a highly harmonious paradox.
