Heiko and Gernot Heinrich cultivate the vineyards organically-biologically with a great deal of manual labor and care. After harvesting, the grapes remain on the skins for two weeks in wooden fermentation vats and in stainless steel tanks, then gently pressed and spontaneously fermented.
