The south-facing vineyard, which Fritz and Peter cultivate organically, is internally referred to by them as \"Erste Lage\" (First Growth). Riesling thrives particularly well on rich loess-loam soils with a high lime content.\u003c\/p\u003e\n\u003cp\u003eTo harvest fully ripe grapes in autumn, Fritz and Peter May begin as early as January with the gentle pruning of the almost 30-year-old vines and an early defoliation of the grape zone for optimal sun exposure, as well as yield reduction through green harvesting in early summer. Selective hand-picking of the grapes often takes place in several passes. The journey to the new winery is short, where the grapes are gently processed further.
