The Chardonnay and Weißburgunder grapes are already grown together as a mixed set in the vineyard. At the winery, all grapes are destemmed, meaning freed from their stems. The resulting mash from both grape varieties is gently pressed with a pneumatic press. Fermentation takes place at a temperature-controlled below 20° C in stainless steel tanks, which preserves the fruitiness and also the varietal typicality. The aging on fine lees also takes place in stainless steel tanks, resulting in fine, elegant, fresh wines.
