These vintage sardines (Sardines Millésimées) are caught at the end of the sardine season when they have a particularly high fat content of about 12%. This is necessary for these special sardines to mature so well and to be a true delight even after a decade (or especially then).\u003c\/p\u003e\n\u003cp\u003eTo ensure the vintage sardines last a long time, we recommend turning the tins every 6 months so that the sardines remain well covered in oil on all sides.
