Owner and oenologist Giorgio Maffei, who has around thirty years of experience in sparkling wine production, hand-picks the best apples from his own cultivation to ensure the unique quality of his products. The secret lies both in the careful selection of apple varieties that harmonize perfectly and make the cider a taste experience, and in the meticulous production process. After harvesting, the apples are gently pressed and the must is naturally fermented in pressure tanks with the addition of yeast. These pressure tanks bind the carbonic acid produced during fermentation in the cider, creating a fine sparkle.
