It displays a pale straw yellow in the glass, is complex and multi-layered. The animating acidity of the pear with well-integrated tannin notes results in a round and creamy character with a slight sweetness reminiscent of pear compote. After harvesting, the fruits in the Jörg Geiger Manufactory are first allowed to rest in closed boxes, where the ripening gas ethylene concentrates and can activate enzymes. Only then are the pears gently pressed and cold-fermented in stainless steel tanks.\u003c\/p\u003e\n\u003ch4\u003eTraditional Bottle Fermentation – at the Jörg Geiger Manufactory\u003c\/h4\u003e\n\u003cp\u003eThe second fermentation, which lasts between 12 and 16 weeks, takes place in the bottle. The Green Hunting Pear sparkling wine then remains in the bottle for at least 15 months to mature on its lees. Flavors of wine and yeast exchange, creating complexity. Only at the very end of the maturation period are the bottles, which have been stored horizontally until then, shaken daily and each time placed a little steeper until, after 43 rotations, the yeast plug has settled in the neck of the bottle.
