Spicy-exotic, delicately yellow-fruited, much fresh elderflower, nettle, minerals... a whole palette of aromas that the wine fires from the glass, making it irresistibly refreshing!\u003c\/p\u003e\n\u003cp\u003eA total of eight vineyards in the Southern Palatinate and along the Mittelhaardt are planted with seven different Sauvignon Blanc clones. A decisive advantage here are the different microclimates of the various sites, which positively influences the diversification of aromas. The soils on which the vines grow are as varied as the sites themselves.\u003c\/p\u003e\n\u003ch3\u003eWinemaking – Oliver Zeter\u003c\/h3\u003e\n\u003cp\u003eThe vines are mostly trained using the cordon system, which leads to a more linear and thus easier-to-manage grape zone. The vineyards are permanently green, partly with natural herbs and partly with sown grass. Harvesting is done – depending on the vintage – by hand or with a mechanical harvester. A portion of the grapes is harvested relatively \"green\" with a moderately low Oechsle value of 80°, the main part at full ripeness, and the last part is even allowed to be slightly overripe.\u003c\/p\u003e\n\u003cp\u003eThe CO2 added as dry ice prevents oxidation during the several-hour maceration period to enhance the bouquet. The grapes are then pressed in a pneumatic press under exclusion of air. Fermentation takes place in stainless steel tanks of various sizes. A variety of yeasts ensures the necessary diversification. In addition, part of the wine is spontaneously fermented, and another – smaller portion – is even aged in barrique barrels.\u003c\/p\u003e\n\u003cp\u003eBefore bottling, the young wine is filtered only once with a diatomaceous earth filter.
