After a long aging on the lees until summer, the wines are bottled unfined before autumn. The complexity of these wines is the focus here, framed by the fine expression of the wooden barrel. Three vineyards in the localities of Edenkoben, Diedesfeld and Hambach are planted with this variety as an experimental cultivation. The training is done as a cordon, which results in a linear and thus easier to handle grape zone. Nevertheless, the cultivation of this variety is very labor-intensive in our latitudes due to its enormous fertility. The vineyards are permanently greened, partly by natural herbs and partly by targeted seeding.\u003c\/p\u003e\n\u003cp\u003eThe harvest took place as late as the weather and the health of the grapes allowed. The grapes were harvested in small, 20-kilogram crates. Afterwards, the grapes were crushed and pressed. The juice was immediately placed in used French oak barriques – where the must was then spontaneously fermented.
