The grapes are harvested exclusively by hand at the right time and carefully transported to the winery in small boxes. Since the red color pigments of the Pinot Noir grape are located exclusively in the berry skin and not in the pulp, the grapes are pressed extremely gently, resulting in an almost white juice. The base wine itself, which was aged 60% in small wooden barrels and 40% in steel, underwent a 30-month long lees aging. The secondary fermentation to produce the sparkling wine occurred using the traditional bottle fermentation method. After disgorgement, the bottle is topped up with original base Sekt, so the Kuhn Blanc de Noirs Sekt remains beautifully dry and fully fermented.
