The grapes are harvested exclusively by hand at the right time and carefully transported to the winery in small boxes. Since the red color pigments of the Pinot Noir grape are found exclusively in the skin and not in the flesh, the grapes are pressed extremely gently, resulting in an almost white juice. Even the base wine, 60% of which was aged in small wooden barrels and 40% in stainless steel, has undergone a long 30-month yeast aging process. The sparkling wine production took place with the second fermentation using the traditional bottle fermentation method. After disgorgement, the bottle is refilled with original brut sparkling wine, ensuring the Kuhn Blanc de Noirs Sekt remains beautifully fermented dry.
