Inside the nut is a single large seed. The seed coat is thin and membranous. Hazelnut seeds contain about 60 percent fatty oil, but neither sugar nor starch, which is why no alcohol can be produced from them. Therefore, they are steeped (macerated) in neutral alcohol in roasted, peeled, and crushed form. The aroma of the fruit thus transfers to the alcohol. This macerate is then distilled using the traditional and very elaborate rough and fine distillation process.
