Thus, the Rings Kalk \u0026amp; Stein combines the best of both grape varieties and two Pfalz sites: pear and melon, nut and white blossoms, toast and flint. The white wine shows cool salinity and powerful richness.\u003c\/p\u003e\n\u003ch3\u003eRings – Winemaking\u003c\/h3\u003e\n\u003cp\u003eThe Rings brothers place great importance on healthy soils, as only from them can healthy vines grow and healthy grapes develop. They begin early with sowing buckwheat, clover, and radish, which prevents soil erosion, attracts beneficial insects, and retains moisture in the soil, which is revitalized with the application of horse manure as a natural fertilizer. Canopy management is also important for the quality of the wine: double shoots are manually removed, and depending on the weather, the grapes are defoliated and thinned to aerate them. Each grape variety was hand-harvested at the optimal time, fermented, pressed, and aged separately, and only blended shortly before bottling. The grapes for Rings Kalk \u0026amp; Stein are hand-picked and selected at the optimal harvest time, and some are pressed as whole clusters. After a short maceration period, the natural yeasts are allowed to work and initiate spontaneous fermentation. The wine was aged for 16 months on its full lees in large oak barrels, a technique Andreas and Steffen master very well. This makes the wine more complex, multifaceted, and aromatic in a positive sense.
