The Spätburgunder grapes grow in cool locations with limestone and calcareous marl, which are cultivated by the Rings brothers, Andreas and Steffen, from pruning to harvesting. With Ortswein, the focus is on the typicality of the wine-growing village, not the grape variety or a single vineyard.\u003c\/p\u003e\n\u003cp\u003eWeingut Rings produces two Spätburgunder Ortsweine, the Freinsheimer and the Kallstadter, one from quartz sand and one from limestone. The two wines are like two brothers from the same parents, raised with the same values, equally protected, equally encouraged, yet with their own unique character, both wonderful. Thus, the Spätburgunder from limestone is the more elegant, tauter type. It shows bright, red berry notes, like small, wild-growing wild strawberries, with a hint of forest floor, followed by something smoky from the wood aging, cool, salty minerality, delicate and powerful at the same time.\u003c\/p\u003e\n\u003ch3\u003eRings – Winemaking\u003c\/h3\u003e\n\u003cp\u003eThe Rings brothers place great importance on healthy soils, as only from them can healthy vines stand and healthy grapes grow. They begin early with the sowing of buckwheat, clover, and radish, which prevents soil erosion, attracts beneficial insects, and retains moisture in the soil, which is revitalized with the application of horse manure as a natural fertilizer. Canopy management is also important for the quality of the wine: double shoots are removed manually, and depending on the weather conditions, the grapes are defoliated and thinned to aerate them. The grapes are hand-picked at the optimal harvest time, sorted and selected again at the winery, and destemmed. 3,800 L\/Ha are harvested. Without pumping, the Spätburgunder grapes are transferred to their fermentation tanks. In warm years, a small portion is not destemmed. After a short maceration period, natural yeasts are allowed to work and initiate spontaneous fermentation.
