It owes its profound minerality to the calcareous marl soils. A hint of spruce resin can also be detected. In addition to soil composition, the aspect and altitude of the vineyard are crucial. Furthermore, the vine material exhibits very distinct attributes. Late selective hand-harvesting and healthy grapes free of botrytis are prerequisites for skin contact, no sulfur in the first months, and \"Sur Lie\" aging on the lees.\u003cbr\u003e\u003cbr\u003eThe vines for the Grüner Veltliner \"Hundsberg\" grow on the Köhlberg at 339 m above sea level. On average, they are 56 years old. The soil consists of primeval sea sediment with clay and loess deposits and has a high lime content. The harvest took place on October 24, 2016, by hand, with only 22 hl yield per hectare. The grapes were selected, destemmed and lightly crushed, and left on the skins for 24 hours before being gently pneumatically pressed. Sulfur was only lightly added after 5 months. Aging and maturation took place in oak barrels for 9 months. Leopold Uibel only bottles 1,250 bottles of this wine per year.
