Edmond Fallot - French Mustard and Fine Vinegar
Edmond Fallot is an institution in France when it comes to mustard. Since 1840, the family business from Burgundy has been producing French mustard and fine vinegar. Over generations, the traditional know-how of mustard production has been preserved and refined. Particular emphasis is placed on ensuring that all flavor characteristics of the paste are retained during the grinding of the mustard seeds in the stone mill, and that the mustard aroma is complex.
Edmond Fallot - classic mustard for modern cuisine
La Moutarderie Edmond Fallot is now run by Marc Désarménien, Edmond Fallot's grandson. Even though Edmond Fallot today produces not only classic Dijon mustard, coarse mustard and all kinds of flavored mustards for modern cuisine, but also vinegars, spices and pickled foods such as gherkins, the quality standard for these products is as high as one has come to expect from Edmond Fallot for generations. To preserve the historical legacy of the master mustard maker, Fallot opened a small museum in 2003, which takes visitors on an interactive discovery tour of traditional production on stone millstones. The Fallot mustard mill now has two of its own shops in Beaune and Dijon, and is committed to the re-cultivation of mustard plants in Burgundy and is certified according to IFS (International Food Standard).
