In the mountains of the Tuscan-Emilian Apennines, not far from Modena, the Caseificio Cavola cheese dairy has been producing Parmigiano Reggiano PDO since 1929. The milk comes from cows that graze on the alpine pasture of Monte Cusna and feed on untreated mountain forage. Cheesemaking, salting, and aging take place directly in the mountains – a classic mountain Parmesan with a strong aged aroma.
