Giuseppe Giusti – Aceto Balsamico di Modena
The rise of Giuseppe Giusti Aceto Balsamico di Modena began at the turn of the 19th to the 20th century, a time when the growing middle class developed a desire for enjoyment, luxury, and travel. During this period, the exclusive balsamic vinegar from Acetaia Giuseppe Giusti also experienced its Belle Époque. The special quality of the aged vinegars, the Aceto Balsamico di Modena, impressed both the public and jurors at international fairs so much that a veritable shower of medals (14 gold medals) rained down on Giusti, leading to sustained demand for the treasures from Emilia Romagna. Even today, the gold medals can be seen on the labels of Giusti vinegars, guiding customers through the different qualities of the balsamic vinegars (the more medals, the longer the Aceto Balsamico has aged).
The history of Giusti vinegars from Modena is a very long one. The Giusti family and the production of fine vinegars, the Aceto Balsamico di Modena, were first documented at the end of the 16th century. Giuseppe Giusti is one of the oldest, most renowned, and highly awarded producers of balsamic vinegars in Italy. His vinegars were so esteemed that he was appointed royal purveyor to the Savoyard court by King Vittorio Emanuele II. Even today, the balsamic vinegars are stored in centuries-old barrels from that era. These are the true treasure of the family business and are irreplaceable.
Giuseppe Giusti – the Recipe for Good Aceto di Balsamico
At the 1863 agricultural exhibition in Modena, Giuseppe Giusti summarized and documented the three rules for excellent vinegar:
- the selection of good grapes
- the quality of the barrels
- and the aging time
These rules are still valid today and are known and documented as "La Recetta Giusti". With great passion and extensive knowledge of good vinegar, the traditional Acetaia Giusti still produces Aceto Balsamico di Modena from the best Trebbiano and Lambrusco grapes, aged for a long time in oak, chestnut, cherry, or ash wood barrels using the Solera method.
