L‘Atelier du Sel – Independent Paludiers
Under the name L'Atelier du Sel, two independent paludiers, independent salt producers, have joined forces to harvest the finest Fleur de Sel and Protected Geographical Indication (PGI) Guérande salt on the salt marshes of Guérande, just as their fathers and grandfathers did. It is therefore not surprising that Gilles Morel is the uncle of Matthieu Le Chantoux, because the profession, or rather the calling, of a paludier is passed down through families, and with it the accumulated knowledge of the salt workers. It is precisely these independent salt workers who place particular emphasis on the quality of their salt, which is not subject to mechanization, but respects the structure and taste of a natural salt.
L‘Atelier du Sel – from the Guérande salt marshes
The salt pans of L'Atelier du Sel are located in the Guérande salt marshes in the town of Assérac and are refined and packaged in the workshop in Saint-Molf. The delicate fruits of the ocean, which are created naturally by sun and wind, are harvested by hand with the exhaustive knowledge of Gilles and Matthieu. The fine Fleur de Sel is traditionally hand-picked from the water surface, while the coarse salt is neither washed nor treated. In addition to these classics, the two from L'Atelier du Sel have specialized in flavored salt and offer salt with seaweed, herbs, garlic, pink berries, fennel and orange, as well as salt with Piment d'Espelette.
