Il Borgo del Balsamico – Balsamic Vinegar from Italy
Il Borgo del Balsamico is the name of the small Italian vinegar manufacturer owned by the Crotti family, which brings balsamic vinegar from Italy to Germany. On an old estate in Emilia Romagna, not far from Modena, cooked, fermented grape must matures into precious Aceto Balsamico di Modena in barrels, some of which are 200-300 years old, made of French oak.

The Crotti family owes its quality awareness and sense of design to its successful work in the fashion industry. Christina Crotti designed modern packaging and a clear color concept for the traditional vinegars: the darker the color, the longer the aging time.
Aubergine, the elegant color, is reserved for Aceto balsamico Tradizionale DOP. Yellow, orange, and red are the colors for Balsamico di Modena IGT and the Condimenti, the dressings, all packaged in club bottles, with red indicating the longest aged quality. Each bottle is sealed by hand with binding material and sealing wax, which is stamped while the wax is still warm.
Among the Tinello range of vinegars, the red-packaged Tinello is also the longest aged. The Tinello vinegars have a slightly higher acidity of 6%. This makes them somewhat more acidic than the Balsamico di Modena.
Il Borgo del Balsamico also produces a very good white wine vinegar and a very good red wine vinegar, both produced through a natural fermentation process. The wonderfully mild white balsamic vinegar and the aromatic apple cider vinegar are created by adding grape or apple juice.
