In Fontvieille, Provence, one of the most beautiful villages in the Vallée des Baux, the Arnaud family has been processing local olives since 1947. From September to January, green Picholine and black, air-dried varieties are pitted, seasoned with Provençal herbs, and preserved in brine, red wine vinegar, or oil. Also available are tapenades, creams, and Camargue salts – Provence in jars.
