Essenz der Alpen – Alpine Salt from Tyrol
Johanna Jenewein, the founder of Essenz der Alpen, has embarked on an exciting journey with her company. The idea of producing "Alpine Salt from Tyrol" and starting her own business came to her when she realized that the Austrian Alps hold a wealth of untouched, valuable salt, just waiting to be discovered. Inspired by traditional salt production, which has been practiced in Hall in Tirol for millennia, she decided to revive this ancient cultural technique and adapt it to modern needs.
Essenz der Alpen – Pure Salt, with Herbs, Spices, or as Fleur de Sel
The alpine salt and Fleur de Sel from Essenz der Alpen are produced in the traditional pan saltworks in Hall in Tirol. The brine, extracted from deep springs, is heated in shallow pans. Through slow evaporation of the water, fine salt crystals form on the surface. These are carefully skimmed off by hand. The entire process is carried out without additives, resulting in a pure, natural salt with a delicate flavor. First, the extracted salt is dried and then ground to varying degrees of fineness, depending on whether it is to be mixed with alpine herbs, pine cones, or other spices.
Johanna Jennewein packages the handmade salts in clay pots – these are sustainable, as they can be reused as storage containers or baking molds. Labeling is still done by hand – plastic is avoided in the packaging.
