Lang Weinessig – Vinegar from the Palatinate
Lang Weinessig is a vinegar manufacturer from the Palatinate region of Germany. The trained chef and founder, Jens Michael Lang, has dedicated himself to the art of sour indulgence. Good vinegar is his passion. It works out perfectly that he lost his heart to a vintner's daughter from the Palatinate, as good wine is, after all, the basis of good vinegar. For over a decade, Jens Lang has been producing flavorful wine and balsamic vinegars, as well as aperitif vinegars and vinegar creations such as the popular "Tunken" (sauces) in the small village of Edesheim, near Edenkoben on the Southern Wine Route, inviting us into the tart world of seasoning.

In addition to wine from the family vineyard, the Slow Food promoter gladly uses regional ingredients such as quinces, cherries, apricots, and chestnut honey. Figs and dates, vanilla and saffron, however, come from further afield for the special vinegars of this Palatinate food manufacturer. In developing his vinegar creations, he can rely on his palate, trained by experience in Michelin-starred gastronomy, and so can we.
