Anko – Artisanal Preserves from Spain
Since 1959, Anko Conservas Artesanas has been producing artisanal vegetable preserves and vegetable soups in Careita, in the heart of the Spanish region of Navarra. Founder Benito Prat and his family, with great love for their homeland and for a wide variety of vegetables, select the best raw materials of excellent quality. These are processed using traditional methods, but with modern production techniques and high food safety standards in their new production facility built in 2016, into delicious vegetable preserves and vegetable soups that are completely free of preservatives and colorings. Due to its artisanal processing, Anko is permitted to use the "Alimentos artesanos" seal, awarded by the regional government of Navarra to promote and protect craftsmanship in the food sector.
Anko – Spanish Vegetable Preserves
When you live in Spain's vegetable garden like the Benito Prat family, it is natural to use only the best regional ingredients for the vegetable preserves so typical of Spain, such as roasted Pimientos del Piquillo or authentic-tasting Gazpacho. This family tradition is also continued by the second generation of Prats, who have been leading the company since 1989. Thus, the deep red bell peppers, a classic accompaniment to meat, fish, bread, or potatoes, and a must-have in any Spanish kitchen, are still roasted over beech and oak wood until the skin is completely black, then carefully peeled by hand. This develops their fine, sweet-smoky aroma, which makes the Pimientos preserved in oil a special taste experience.
