MURI Drinks Copenhagen
Muri Drinks is an innovative manufacturer of non-alcoholic beverages based in Copenhagen, Denmark. The company was founded in 2020 by Murray Paterson, a distiller from the United Kingdom who previously worked at the renowned Empirical Spirits distillery. He is supported by Ioakeim Goulidis, formerly part of the fermentation team at the world-famous Noma restaurant.
Muri Drinks stands out through its use of unique ingredients and innovative fermentation techniques to create complex and sophisticated non-alcoholic beverages. Instead of imitating or de-alcoholizing alcoholic drinks, Muri develops independent products that stand on their own and are particularly intended as food pairings.
Muri Drinks' product range includes several remarkable creations:
- Passing Clouds: A sparkling beverage made by fermenting gooseberries, quince kefir, jasmine tea, and kvass infused with sweet woodruff and geranium. It is characterized by dry, complex, and floral notes, reminiscent of Pet-Nat wines.
- Fate to Black: A still red wine alternative, a cuvée of fermented red currants, chamomile kefir, and fig leaf and pine needle kvass with aromas of red berries, light acidity, and soft tannins.
- Yamilé: A rosé-like beverage with a base of carbonic macerated raspberries, complemented by gooseberry mead and beechwood-smoked, lacto-fermented rhubarb. It is refreshingly dry with playful flavor complexity and wine-like finesse.
Muri's products are handcrafted in limited batches and made exclusively from natural ingredients, without the use of artificial flavors or colorings. This approach reflects the company's commitment to quality and authenticity.
