Maison Fossier is a traditional biscuit factory that has made history for two and a half centuries with its Biscuit Rose de Reims. Even today, it combines the good taste of times gone by with the desires of modern gourmets. In 1690, a baker in Champagne created a sweet treat that he could bake between meals in the oven, when the oven still had enough heat stored, slowly baked at a not-too-high temperature. The Biscuit Rose de Reims was born. Soon, this baker with his airy, crispy pastry became the purveyor to the court of Louis XVI, and all gourmets wanted his biscuits, cookies, and gingerbread. In 1845, the baker Monsieur Fossier took over the company and continued it successfully.

Of the biscuit manufacturers still active in the Marne region at the beginning of the last century, Fossier, with its 100 employees, is the only one remaining. With its pink pastry, Maison Fossier has become a cult and trademark par excellence. The Biscuit Rose de Reims, the pink ladyfingers, as well as the almond or raspberry macarons are not only delicious with tea or, as tradition dictates, with champagne, they can also be used to refine desserts.
