Altes Gewürzamt – that's what Ingo Holland's spice manufactory was to be called. Period. After all, in 2007, Michelin-starred chef Ingo Holland had closed his restaurant Zum Alten Rentamt in Klingenberg, Franconia, to dedicate himself exclusively to the finest quality spices, to develop exceptional spice blends, and to become the expert in all things spices – the spice pope. But let's start from the beginning...
Altes Gewürzamt – the success story of an uncompromising individual
Even at 13, Ingo Holland knew he wanted to be a chef. And Ingo Holland didn't do things by halves! After his culinary training, he worked with top chefs like Dieter Müller and Harald Wohlfahrt before taking over the restaurant Zum Alten Rentamt in 1997, where he was awarded a Michelin star and 18 Gault-Millau points.
However, he always had to compromise when it came to spices, which did not suit Holland's straightforward character, because the quality Ingo Holland desired was simply not offered on the market by catering suppliers. So Ingo Holland embarked on his journey from top chef to spice miller, and even more so, to the absolute expert in spices. No one could tell him anything about it; Ingo Holland knew everything about spices, their origin, their quality, their effect on our bodies, and above all, their use in the kitchen.
During his time as a restaurant owner and chef, he developed extremely creative, masterful spice blends that other chefs and Michelin-starred chefs also bought from him. The Altes Gewürzamt spice trade developed so well that in 2007, Ingo Holland decided to hang up his chef's apron and uncompromisingly focus on first-class spices, offering them to amateur cooks through competent specialist retailers. We have been part of this since 2009. Since Ingo Holland's sudden death in June 2022, his son Kilian has continued the spice manufactory. He has clearly inherited his good nose from his father.
