Aceto Balsamico di Modena is a geographically protected product. Anyone who sees "di Modena" on the bottle receives an Aceto whose production is audited and sealed according to fixed rules by the Consorzio Tutela Aceto Balsamico di Modena. There are two classes — Tradizionale DOP, the strictest, and IGP, the more everyday-suitable. Both are genuine Modena Aceti, both are subject to control, and both have their place in the kitchen.

It matures in a series of progressively smaller wooden barrels (oak, chestnut, cherry, ash, juniper) — the official classes are Affinato (at least twelve years) and Extra Vecchio (at least twenty-five years). Consistency as dense as syrup, complex flavor, deep sweetness. Drop by drop — on hard cheese, foie gras, ice cream, in a sauce reduction.

Aceto Balsamico di Modena IGP — The Everyday Classic

The IGP class is grape must plus wine vinegar, aged for a shorter period, controlled according to geographical origin. Lighter in taste, lighter in consistency, versatile in the kitchen. Within IGP, there are different aging levels — measured in gold medals at Giusti, in Bronzo/Argento/Oro at Fattoria Estense, and by label colors at many other Acetaie.

Which Aceto to Use for What
