Mussini Emozione No 12 Rosé – Dressing

The Mussini Emozione No 12 Rosé is a delightful Condimento Agrodolce from Acetaia Mussini. A condimento is a type of dressing, in this case a mixture of concentrated grape must and wine vinegar. It gets its pink color partly because the grape must is not boiled at high temperatures, so the sugar it contains does not caramelize and therefore does not turn brown, and partly because white wine and red wine vinegar are used. Its rich flavor is sweet and sour and is characterized by a lower acidity of 4%.

Emozione No 12 Rosé – balanced Condimento Agrodolce

The Mussini Condimento Emozione No 12 Rosé shows a good density (1.28), which it owes to storage in wooden barrels of different sizes. The wood causes some of the liquid to evaporate and its viscosity to increase. This finely creamy dressing has a full must flavor and a wonderful balance between sweetness and acidity.

The Condimento Emozione No 12 Rosé is therefore well suited wherever the dark color of an Aceto Balsamico would be undesirable: mixed summer salads, grilled or fried fish, poultry, crustaceans, fresh soft cheese. Thanks to its natural sweetness and fruity taste, it is particularly delicious on fresh fruit, desserts and ice cream.
