Mussini Emozione No 12 – Dressing with Balsamic Vinegar of Modena

The Mussini Emozione No 12 is a Condimento with Balsamic Vinegar of Modena from Acetaia Mussini. A condimento is a type of dressing, a mixture of cooked grape must and wine vinegar with the addition of a proportion, here 10%, of Aceto Balsamico di Modena. Its taste is also sweet and sour, but it is characterized by a lower acidity of 4%.

Emozione No 12 – balanced Condimento with Balsamic Vinegar

The Mussini Condimento Emozione No 12 also shows enormous density (1.28), which it owes to its long storage in wooden barrels of different sizes. Due to the wood, some of the liquid evaporates and its viscosity increases. This finely creamy dressing has a full must flavor and a wonderful balance between sweetness and acidity.

Thus, the Condimento Emozione No 12 goes well with steamed fish, grilled meat, crisp leafy salads, and Mediterranean vegetables.

Acetaia Mussini – Balsamic Vinegar from Modena

Acetaia Mussini is a small, family-run vinegar factory from the Modena area in the Italian region of Emilia Romagna. The two cousins Giorgio and Gabriele continue the tradition of their maternal grandmothers and produce high-quality balsamic vinegars. 15 employees watch over 15,000 wooden barrels of different sizes and produce about 800,000 bottles of balsamic vinegar per year.

As a modern Acetaia, Mussini combines apparent contradictions: respect for tradition and a desire for the taste of experimentation. In this way, the two create a connection to the past as well as a vision for the future with their high-quality products. They promote local food culture and take into account the demands of their modern clientele. This is exemplified by the new Bar series, which allows for enjoying the flavors of Italian cocktails without alcohol with the help of a scrup, a vinegar-based syrup.
