Shrub Heidelbeer-Himbeer ist ein Fruchtsirup aus Heidelbeeren und Himbeeren, angesetzt in naturtrübem Bio-Apfelessig und mit Zucker abgeschmeckt — die meistverkaufte Sorte der Manufaktur. Kein Beerensirup für Kinderlimonade, kein fertiges Dressing, kein Getränk für das pure Glas.
Shrub Heidelbeer-Himbeer ist ein Fruchtsirup auf Apfelessig-Basis aus der Manufaktur Schusters Shrub, in dem zwei Beeren mit klar verteilten Rollen arbeiten. Die Heidelbeere bringt Tiefe und Farbe, die Himbeere die Säurespitze darüber. Löffeln Sie den Sirup über einen Blattsalat, sehen Sie zuerst das Violett zwischen den Blättern. Am Gaumen kommt die Reihenfolge umgekehrt an: erst der dunkle Grund der Heidelbeere, dann der helle Zug der Himbeere. Genau diese Arbeitsteilung erklärt, warum diese Sorte das Sortiment anführt.
Warum die Heidelbeere allein zu leise bliebe
Die Heidelbeere hat Farbe und Tiefe, aber wenig Säure. Die Himbeere hat Säure und flüchtiges Aroma, aber wenig Farbe. Im Glas schließt jede die Lücke der anderen.
Im Duft steht zuerst die Himbeere, hell und beerig, dahinter die dunklere, fast waldige Note der Heidelbeere. Im Glas ist die Farbe fast schwarzviolett und stammt allein aus der Schale der Heidelbeere. Am Gaumen dreht sich das Verhältnis. Die Heidelbeere trägt breit und samtig, die Himbeere schneidet mit ihrer Spitze hindurch. Das verhindert, dass die Frucht ins Marmeladige kippt. Der Apfelessig zieht darunter eine klare Linie.
Im Abgang bleibt eine dunkelbeerige Herbe stehen, runder als bei der sortenreinen Himbeere. Wer eine einzelne, klar erkennbare Beerennote sucht, wird die Mischung als zu vielschichtig empfinden. Die Essignote verschwindet auch bei 1:15 nicht, und sie soll es nicht. Für Menschen, die Säure im Getränk grundsätzlich ablehnen, ist dieser Sirup nicht geeignet.
Das Dressing, an dem die Manufaktur nichts mehr ändert
Die Manufaktur hat für diesen Shrub ein Dressing festgeschrieben, das ohne Abschmecken funktioniert. Bauen Sie es einmal exakt nach, bevor Sie anfangen zu variieren.
Verrühren Sie fünf Esslöffel Weinessig mit ein bis zwei Esslöffeln Shrub, einem halben Teelöffel Salz und einem viertel Teelöffel Pfeffer. Schlagen Sie dann zwei Esslöffel Färberdistelöl und zwei Esslöffel Olivenöl langsam ein. Zuletzt kommen eine in dünne Scheiben geschnittene Schalotte und frische Kräuter dazu, Petersilie oder Dill. Zu Feld- und Blattsalaten passt das ebenso wie zu Babyspinat mit Ziegenkäse.
Gut zu wissen: Die Säure im Dressing kommt aus dem Weinessig, nicht aus dem Shrub. Der Sirup steht hier für die Frucht, nicht für die Säure — daher die kleine Menge. Wer ihn höher dosiert, bekommt kein fruchtigeres, sondern ein süßeres Dressing.
In einer Barbecue-Sauce arbeitet er andersherum und bricht mit seiner Säure die Süße; ein Esslöffel gegen Ende der Kochzeit genügt. Als Limonade genügen 1,5 bis 2 cl auf ein 0,2-Liter-Glas Sprudelwasser, als Aperitif ein Teil Shrub auf zehn Teile Sekt. Wer das Prinzip zuerst pur verstehen möchte, beginnt bei der sortenreinen Himbeersorte.
Zwei Fruchtessige, ein Verschnitt
Hanna und Gabi Schuster führen ihre Manufaktur in Untersteinbach im Steigerwald seit 2012 als gläsernen Betrieb. Wer möchte, sieht der Produktion beim Arbeiten zu.
Heidelbeeren und Himbeeren gehen als ganze Frucht in den naturtrüben Bio-Apfelessig. Weiche Beeren brauchen keinen mechanischen Aufschluss — anders als Quitten, die gehäckselt werden, oder Zitrusfrüchte, die in Scheiben geschnitten werden. Vier bis sechs Wochen zieht der Essig die Aromastoffe heraus. Fachlich heißt dieser Vorgang Mazeration.
Danach werden die Beeren ausgepresst, das Fruchtfleisch wandert auf den Kompost. Der Fruchtessig bekommt anschließend so viel Zucker, bis Süße und Säure im Gleichgewicht stehen, und geht heiß in die Flasche. Das hält ihn rund drei Jahre, ganz ohne Konservierungsstoff. Bei einem Verschnitt entscheidet sich alles am Mengenverhältnis: Zu viel Himbeere, und die Heidelbeere verschwindet darunter; zu wenig, und der Sirup wird stumpf. Die meisten der rund 25 Sorten setzen auf eine Hauptzutat. Hier müssen zwei Beeren gegeneinander austariert werden.
Warum diese Sorte im Küchenregal steht
Dieser Shrub ist kein Getränkesirup, der gelegentlich in die Küche darf. Er ist umgekehrt gebaut: ein Küchenprodukt, das nebenbei auch als Limonade funktioniert.
Das erklärt seine Stellung im Sortiment. Wer ihn einmal im Dressing hatte, kauft nach, weil der Salat ohne ihn flacher schmeckt. Als Mitbringsel für Menschen, die gerne kochen, ist er deshalb verlässlicher als eine ausgefallene Sorte. Er landet nicht im Schrank, sondern neben dem Olivenöl. Wer allerdings von vornherein weiß, dass er es dunkler und trockener mag, ist bei der herberen Sorte aus schwarzer Johannisbeere besser aufgehoben. Mit knapp 61 g Zucker je 100 ml bleibt der reine Sirup allerdings ein Süßungsmittel. Im Dressing verteilt sich das auf vier Portionen, für den Löffel pur bleibt es bedenkenswert.
Zwei Beeren, ein Esslöffel, und der Blattsalat ist kein Beiwerk mehr, sondern der Grund für das ganze Essen.

How it all began
Does this sound familiar? You return from vacation with a bottle of olive oil from Portugal in your suitcase, a jar of fruit spread from South Tyrol, perhaps a bar of chocolate from a small factory in France — and you ask yourself: Why can't I find something like this easily at home? We kept asking ourselves this question.
We are Kerstin and Stephan Uhlenbusch from Nordhorn, a city on the German-Dutch border. On our travels through Europe, we made the most wonderful culinary discoveries: mountain apple juices from the high altitudes of South Tyrol, Breton barrel butter, handmade pasta from Italy, French sea salt. It wasn't the big luxury products that fascinated us, but rather the honest, artisan-made foods from people who put their heart and soul into their products.
In 2002, we decided to turn this passion into our profession: to make good food accessible to everyone who cannot travel to the producers themselves. This is how our gourmet shipping business came into being — initially as a store in Nordhorn, soon after as one of the first gourmet online shops in Germany. Back then under the name nur Gutes (only good things) — today we continue it as genussland.de. The ambition has remained the same: this is where good taste resides.
Who we are
What drives us is the same curiosity with which we started in 2002: finding out who truly makes good food. Over more than two decades, we have built a network — with producers, traders, restaurateurs, and culinary artisans from all over Europe.
Kerstin was the managing director of the association of leading delicatessen merchants in Germany — the industry association of the country's best owner-managed delicatessen stores. In this role, she not only accompanied but actively shaped the German delicatessen industry. With the deli Festival, we also launched our own B2B trade fair for delicacies, which brought together producers, traders, and restaurateurs from all over Europe. The festival no longer exists today — but the relationships that arose from it still accompany us.
What does this mean for you? We know our industry like almost no one else. Chambers of commerce and economic development agencies from all over Europe repeatedly introduce us to exciting producers who want to offer their products on the German market. This way, genussland always offers something you won't find in any supermarket and hardly in any other shop.

Fruit spreads, aromatic honey, truffle delicacies, chutneys, and mustard sauces. Vintage sardines and fine canned fish, risotto rice, and handmade pasta — basic ingredients for honest cooking and specialties for special moments.
Our fresh delivery service brings the legendary Beurre Bordier from Brittany, Italian Burrata, and fine salami to your home — securely packaged and continuously chilled.
Wine is particularly close to our hearts: white wine from Rheinhessen and the Pfalz, red wine from Austria and Burgenland, rosé for barbecue season, natural wine for the adventurous, sparkling wine and champagne for special moments. Not from all over the world — but from winemakers we have personally visited and whose work we appreciate. Many of them work organically or biodynamically.
Our Philosophy
What makes a product a genussland product? We ask ourselves this question for every single item we add to our range. The answer is never one-dimensional – it's the combination of craftsmanship, origin, ingredients, and the people behind them.
We ask many questions before a product finds its way into our shop. How is it made? Where do the raw materials come from? What philosophy does the manufacturer pursue? We quickly notice whether we are hearing marketing clichés or if a producer is happy to explain their journey. It is precisely this enthusiasm that we seek – and repeatedly find.
Craftsmanship. We prefer products from small manufactories and family businesses that often produce their culinary treasures by hand for generations. The careful processing and artisanal skill can be tasted in every bite.
Best Ingredients. For us, good quality begins with the raw materials. Whether it's fruit, vegetables, milk, meat, or grain – we ensure that our manufacturers rely on first-class, as natural as possible, ingredients. Many of our producers are organically certified; our shop itself is organically controlled under the number DE-ÖKO-037.
Origin and Regionality. We appreciate products with a clear regional identity. A South Tyrolean mountain apple juice made from slowly ripened, old apple varieties. A Portuguese olive oil from trees that have shaped the landscape for centuries. These stories of origin make delicacies what they are.
Personal relationship with the manufacturer. We have known many of our suppliers personally for years, some for over two decades. We visit them, taste together, and exchange ideas. This proximity guarantees transparency and trust.
At the end of the day, it has to taste good. We try all products ourselves – not just once, but again and again while cooking, at the table, on the plate. Only what convinces us personally finds its way into the shop.

What brings us the most joy: We get to accompany passionate individuals on their journey. People whose drive it is to make a good product even better. Some have been with us since our founding - for over twenty years.
There's the South Tyrolean fruit farmer who presses mountain apple juice from old, slowly ripened apple varieties, unlike anything else. The Italian balsamic family who ages their vinegar in Modena for decades. The Breton butter manufactory whose hand-churned butter is on the menu of the best restaurants in Europe. The Danish licorice pioneer who reinvented a centuries-old specialty.
Behind every product in our shop stands a person, a family, a story. And it is precisely these stories that make the difference between an interchangeable food item and a true delicacy.

International Shipping Costs
We are also happy to ship your orders to many European countries such as Austria, Netherlands, Belgium, Luxembourg, France, Spain, Portugal. Here, a minimum order value of 50 € applies. There is no free-delivery value. No shipping of products subject to excise duty (alcohol). Gross prices are adjusted to the individual VAT rates of the respective country. Sales tax will be charged in any case. The shipping price will be calculated at checkout and displayed before the order.
For international deliveries, shipping costs are calculated per package. (Maximum 18 bottles per package or 25kg). Shipping to certain areas or islands may incur additional costs, which we will inform you of before shipping. Remote areas cannot be supplied. No freight forwarding to islands.
For international deliveries, providing the recipient's telephone number with the order is mandatory. (The specification of a telephone number is obligatory for orders abroad.)
Alcohol
Alcohol is only shipped to adults via UPS or DHL; the delivery person will verify age upon delivery. By ordering alcohol, you also confirm that you or the recipient are of legal age.
Shipping Service
For manual creation of shipping labels (for orders by phone, email, or by submitting addresses via spreadsheet), we charge an additional 2.50 € per shipping label for this service, in addition to the stated shipping costs.
Please note that we cannot combine orders already placed.
Investigation of failed payments
For the investigation and refund of payments incorrectly made to us, we charge a processing fee of 5.00 €.
