Shrub Rosmarin-Zitrone ist ein Fruchtsirup aus Bio-Zitronen, Rosmarin, naturtrübem Bio-Apfelessig und Zucker — der Allrounder der Manufaktur. Keine süße Zitronenlimonade aus der Kindheit, kein Kräuterlikör, kein fertig abgeschmecktes Dressing.
Shrub Rosmarin-Zitrone ist ein essigbasierter Fruchtsirup der Manufaktur Schusters Shrub, in dem Zitronenscheiben und Rosmarinnadeln gemeinsam ausziehen. Reiben Sie eine Rosmarinnadel zwischen den Fingern, dann kennen Sie bereits die eine Hälfte dieses Sirups. Die andere ist Zitrone, und zwar nicht nur ihr Saft. Was daraus entsteht, funktioniert im Wasserglas genauso zuverlässig wie auf dem Antipasti-Teller. Diese Doppelrolle beherrscht sonst keine Sorte des Hauses.
Wo das Harz auf die Zitrone trifft
Im Duft steht zuerst die Zitrone, hell und saftig, dahinter der harzig-grüne Zug frischer Rosmarinnadeln. Zwei Aromen, die einander nicht überlagern, sondern nacheinander auftreten.
Am Gaumen kehrt sich die Reihenfolge um. Der Rosmarin kommt früh und kühl, mit einer campherartigen Spur, wie sie ätherische Öle mitbringen. Erst danach setzt die Zitrone ein, und der Apfelessig zieht beides zusammen. Das ist der Trick dieser Kombination: Kräuterwürze allein wirkt medizinisch, Zitrone allein wirkt dünn. Gemeinsam ergeben sie eine Frische mit Boden darunter.
Im Abgang bleibt eine kühle, leicht bittere Note aus der Zitronenschale. Wer einen reinen Zitronensirup erwartet, wird die Kräuternote als zu präsent empfinden. Rosmarin polarisiert, und dieser Sirup versteckt ihn nicht. Für Menschen, die das Kraut ausschließlich mit Schmorbraten verbinden, ist er nicht das richtige Einstiegsprodukt.
Der Weekend Opener braucht einen Zweig im Glas
Die Manufaktur hat für diese Sorte einen Drink festgeschrieben, der den Weißwein zur Hälfte stehen lässt. Er hat einen Namen und eine feste Reihenfolge.
Zwei Zentiliter Shrub ins Glas, dazu zwei Eiswürfel, eine Zitronenscheibe und ein Rosmarinzweig. Darauf 100 ml spritziges Wasser und 100 ml trockener Weißwein. Der Zweig ist dabei keine Dekoration, sondern Bauteil. Er gibt über die Minuten hinweg weiter Öl ab. So bleibt die Kräuternote präsent, während das Eis den Drink verdünnt.
Aus Erfahrung: Nehmen Sie einen trockenen, säurebetonten Weißwein ohne Holz. Ein gehaltvoller, im Fass ausgebauter Wein kämpft mit dem Rosmarin, statt ihn zu tragen.
Ohne Wein wird derselbe Ansatz zum Durstlöscher: ein Teil Sirup auf zwölf Teile eiskaltes Mineralwasser. In der Küche geht er an Antipasti, in Marinaden für Fisch und Geflügel und über gegrilltes Gemüse. Für ein Dressing verrühren Sie ihn mit Zitronensaft und schlagen dann das Olivenöl ein. Wer es kräutriger und weniger zitronig mag, sieht sich bei der mediterranen Sorte mit Thymian um. Hinter der Bar ist der würzige Sirup aus frischem Ingwer der Gegenentwurf.
Zwei Zutaten, zwei verschiedene Uhren
Rosmarin und Zitrone geben ihre Aromen nicht im selben Tempo ab. An diesem Umstand entscheidet sich die ganze Sorte.
Der Fachbegriff für den Auszug lautet Mazeration, ein kalter Prozess ohne jede Hitze. Beim Rosmarin sitzen die ätherischen Öle in winzigen Drüsen außen an der Nadel. Sie sind flüchtig und wandern nahezu sofort in den Essig. Die Zitrone braucht länger, denn ihre Aromen stecken hinter Zellwänden in Schale und Fruchtfleisch. Bis sie vollständig heraus sind, vergehen vier bis sechs Wochen. Der Rosmarin ist zu diesem Zeitpunkt längst fertig und gibt trotzdem weiter ab. Das Mengenverhältnis der beiden ist deshalb keine Geschmacksfrage, sondern eine Rechnung über Zeit. Zu viel Kraut am Anfang, und am Ende schmeckt die Zitrone nur noch mit.
Seit 2012 arbeiten Hanna und Gabi Schuster in ihrer Manufaktur im unterfränkischen Untersteinbach. Wie sehr sie dieser Sorte trauen, zeigt ein Detail aus dem Sortiment. Sie legen die Flasche mit einem trockenen Franken-Müller aus einem Weingut der Region und einem Glas zu einem Set zusammen. Kein anderer Shrub des Hauses bekommt einen Wein an die Seite gestellt. Nach dem Abpressen bleibt ein Zitronenessig zurück, den Zucker in die Balance bringt. Heiß gefüllt bleibt der Sirup danach rund drei Jahre haltbar, ganz ohne Konservierungsstoff.
Warum der Allrounder selten im Schrank verstaubt
Die meisten Sorten der Manufaktur haben eine Adresse. Beerensirupe ziehen ins Glas oder ins Dessert, Gewürzsirupe wandern in die Küche.
Diese Sorte bedient beide Seiten, weil ihre Bestandteile verschiedene Aufgaben übernehmen. Die Zitrone ist ein Getränkearoma, der Rosmarin ein Küchenaroma. Als Mitbringsel ist sie deshalb die risikoärmste Wahl im Sortiment: Sie funktioniert bei Menschen, die kochen, und bei Menschen, die nur ein gutes Glas suchen. Für ein Sommerfest reicht eine Flasche für rund ein Dutzend Gläser. Rund 60 g Zucker je 100 ml stehen auch bei dieser Sorte auf dem Etikett. Stark verdünnt fällt das kaum ins Gewicht. Als Löffel pur bleibt der Wert bedenkenswert. Gekühlt werden muss die geöffnete Flasche übrigens nicht, dafür sorgt der Essiganteil.
Eine Flasche, die mittags im Dressing landet und abends im Weinglas, ohne sich dazwischen erklären zu müssen.

How it all began
Does this sound familiar? You return from vacation with a bottle of olive oil from Portugal in your suitcase, a jar of fruit spread from South Tyrol, perhaps a bar of chocolate from a small factory in France — and you ask yourself: Why can't I find something like this easily at home? We kept asking ourselves this question.
We are Kerstin and Stephan Uhlenbusch from Nordhorn, a city on the German-Dutch border. On our travels through Europe, we made the most wonderful culinary discoveries: mountain apple juices from the high altitudes of South Tyrol, Breton barrel butter, handmade pasta from Italy, French sea salt. It wasn't the big luxury products that fascinated us, but rather the honest, artisan-made foods from people who put their heart and soul into their products.
In 2002, we decided to turn this passion into our profession: to make good food accessible to everyone who cannot travel to the producers themselves. This is how our gourmet shipping business came into being — initially as a store in Nordhorn, soon after as one of the first gourmet online shops in Germany. Back then under the name nur Gutes (only good things) — today we continue it as genussland.de. The ambition has remained the same: this is where good taste resides.
Who we are
What drives us is the same curiosity with which we started in 2002: finding out who truly makes good food. Over more than two decades, we have built a network — with producers, traders, restaurateurs, and culinary artisans from all over Europe.
Kerstin was the managing director of the association of leading delicatessen merchants in Germany — the industry association of the country's best owner-managed delicatessen stores. In this role, she not only accompanied but actively shaped the German delicatessen industry. With the deli Festival, we also launched our own B2B trade fair for delicacies, which brought together producers, traders, and restaurateurs from all over Europe. The festival no longer exists today — but the relationships that arose from it still accompany us.
What does this mean for you? We know our industry like almost no one else. Chambers of commerce and economic development agencies from all over Europe repeatedly introduce us to exciting producers who want to offer their products on the German market. This way, genussland always offers something you won't find in any supermarket and hardly in any other shop.

An extra virgin olive oil from Portugal, a genuine Aceto Balsamico from Modena, Fleur de Sel from the Breton coast, hand-mixed spice blends. Fruit spreads, aromatic honey, truffle delicacies, chutneys, and mustard sauces. Vintage sardines and fine canned fish, risotto rice, and handmade pasta — basic ingredients for honest cooking and specialties for special moments.
Our fresh delivery service brings the legendary Beurre Bordier from Brittany, Italian Burrata, and fine salami to your home — securely packaged and continuously chilled.
Wine is particularly close to our hearts: white wine from Rheinhessen and the Pfalz, red wine from Austria and Burgenland, rosé for barbecue season, natural wine for the adventurous, sparkling wine and champagne for special moments. Not from all over the world — but from winemakers we have personally visited and whose work we appreciate. Many of them work organically or biodynamically.
Our Philosophy
What makes a product a genussland product? We ask ourselves this question for every single item we add to our range. The answer is never one-dimensional – it's the combination of craftsmanship, origin, ingredients, and the people behind them.
We ask many questions before a product finds its way into our shop. How is it made? Where do the raw materials come from? What philosophy does the manufacturer pursue? We quickly notice whether we are hearing marketing clichés or if a producer is happy to explain their journey. It is precisely this enthusiasm that we seek – and repeatedly find.
Craftsmanship. We prefer products from small manufactories and family businesses that often produce their culinary treasures by hand for generations. The careful processing and artisanal skill can be tasted in every bite.
Best Ingredients. For us, good quality begins with the raw materials. Whether it's fruit, vegetables, milk, meat, or grain – we ensure that our manufacturers rely on first-class, as natural as possible, ingredients. Many of our producers are organically certified; our shop itself is organically controlled under the number DE-ÖKO-037.
Origin and Regionality. We appreciate products with a clear regional identity. A South Tyrolean mountain apple juice made from slowly ripened, old apple varieties. A Portuguese olive oil from trees that have shaped the landscape for centuries. These stories of origin make delicacies what they are.
Personal relationship with the manufacturer. We have known many of our suppliers personally for years, some for over two decades. We visit them, taste together, and exchange ideas. This proximity guarantees transparency and trust.
At the end of the day, it has to taste good. We try all products ourselves – not just once, but again and again while cooking, at the table, on the plate. Only what convinces us personally finds its way into the shop.

What brings us the most joy: We get to accompany passionate individuals on their journey. People whose drive it is to make a good product even better. Some have been with us since our founding - for over twenty years.
There's the South Tyrolean fruit farmer who presses mountain apple juice from old, slowly ripened apple varieties, unlike anything else. The Italian balsamic family who ages their vinegar in Modena for decades. The Breton butter manufactory whose hand-churned butter is on the menu of the best restaurants in Europe. The Danish licorice pioneer who reinvented a centuries-old specialty.
Behind every product in our shop stands a person, a family, a story. And it is precisely these stories that make the difference between an interchangeable food item and a true delicacy.

International Shipping Costs
We are also happy to ship your orders to many European countries such as Austria, Netherlands, Belgium, Luxembourg, France, Spain, Portugal. Here, a minimum order value of 50 € applies. There is no free-delivery value. No shipping of products subject to excise duty (alcohol). Gross prices are adjusted to the individual VAT rates of the respective country. Sales tax will be charged in any case. The shipping price will be calculated at checkout and displayed before the order.
For international deliveries, shipping costs are calculated per package. (Maximum 18 bottles per package or 25kg). Shipping to certain areas or islands may incur additional costs, which we will inform you of before shipping. Remote areas cannot be supplied. No freight forwarding to islands.
For international deliveries, providing the recipient's telephone number with the order is mandatory. (The specification of a telephone number is obligatory for orders abroad.)
Alcohol
Alcohol is only shipped to adults via UPS or DHL; the delivery person will verify age upon delivery. By ordering alcohol, you also confirm that you or the recipient are of legal age.
Shipping Service
For manual creation of shipping labels (for orders by phone, email, or by submitting addresses via spreadsheet), we charge an additional 2.50 € per shipping label for this service, in addition to the stated shipping costs.
Please note that we cannot combine orders already placed.
Investigation of failed payments
For the investigation and refund of payments incorrectly made to us, we charge a processing fee of 5.00 €.
