Die Mayonnaise Black Truffle von Jean Bâton ist eine Trüffelmayonnaise mit 1,5 % echtem schwarzem Sommertrüffel, cremig gerührt auf Rapsöl und Freilandeigelb. Kein Trüffelöl-Produkt, keine Alltagsmayonnaise, kein Ersatz für die frische Knolle.
Die Mayonnaise Black Truffle ist eine Trüffelmayonnaise von Jean Bâton, die mit 1,5 % schwarzem Sommertrüffel und sichtbaren Trüffelstücken zubereitet wird. Zwischen Trüffelprodukten liegen Welten: Viele verlassen sich allein auf Aromastoffe, hier steckt gewachsener Trüffel im Glas — die dunklen Sprenkel zeigen ihn schwarz auf weiß. Schon beim Öffnen steigt der warme, erdige Duft auf, der sonst erst über frisch gehobelten Scheiben liegt. Ein Löffel genügt, und ein alltägliches Gericht bekommt Tiefe.
Waldboden trifft Samt, so schmeckt der Sommertrüffel
Die Black Truffle schmeckt erdig, warm und leicht nussig, getragen von einer samtigen, dicht gerührten Mayonnaise. Der Duft erinnert an Waldboden nach dem Regen, an Laub und dunkle Pilze — typisch für den Sommertrüffel, der feiner und leiser auftritt als sein winterliches Pendant aus dem Périgord. Schon beim Abheben des Deckels ist klar, womit man es zu tun hat: Das Aroma steht sofort im Raum, warm und unverkennbar.
Am Gaumen legt sich das Trüffelaroma rund über die cremige Basis und klingt lange nach. Eine dezente Senfnote und feine Säure halten die Fülle im Gleichgewicht, ein Hauch Süße rundet ab. Dadurch wirkt sie weicher als die herb-saure Schwester nach belgischem Rezept.
Die Textur ist seidig und dicht zugleich — sie hält auf der Gabel, schmilzt aber am warmen Fleisch. Weil das Aroma präsent ist, gilt beim Dosieren die Regel der Trüffelküche: Ein Teelöffel zum Auftakt, nachlegen geht immer. So bleibt der Trüffel Akzent und wird nicht zur Tapete.
Der Vergleich mit Trüffelöl lohnt sich. Öl gibt sein Aroma schlagartig ab und kippt schnell ins Aufdringliche, die Mayonnaise dagegen dosiert sich fast von selbst — Fett, Säure und Trüffel sind hier bereits ausbalanciert. Deshalb gelingt mit ihr auch, was mit Trüffelöl oft misslingt: ein Gericht, das nach Trüffel duftet und trotzdem nach sich selbst schmeckt.
Zwei Dinge sollte man wissen: Wer eine pure, neutrale Frittensauce erwartet, wird das präsente Trüffelaroma als zu dominant empfinden — dafür gibt es die Mayonnaise nach belgischem Rezept derselben Manufaktur. Und anders als diese enthält die Trüffelvariante etwas Zucker, für streng zuckerfreie Küchen ist sie nicht gedacht.
Vom Carpaccio bis zur Ofenkartoffel
Die Trüffelmayonnaise ist ein Akzentgeber: sparsam eingesetzt, gezielt platziert, am besten kalt oder lauwarm. Auf Rindercarpaccio ersetzt ein dünner Strich aus dem Spritzbeutel die übliche Senf-Vinaigrette und hebt das rohe Fleisch, ein paar Parmesanspäne dazu, fertig. Ähnlich elegant funktioniert sie zu Vitello tonnato, wenn ein Teelöffel die Thunfischsauce vertieft.
Zu einem Steak vom Grill reicht ein Esslöffel als kalte Sauce, die am Fleisch schmilzt. Ein Käse-Sandwich wird mit einem Teelöffel vor dem Rösten bestrichen zur kleinen Feierabend-Delikatesse. Gebratener Kabeljau, Jakobsmuscheln oder eine simple Ofenkartoffel mit Meersalz vertragen ebenfalls einen Klecks. Und natürlich: Trüffel-Fritten — dicke Pommes, grobes Salz, die Mayonnaise in einer Schale daneben.
Eine schnelle Idee für den Abend zu zweit: Zwei Esslöffel mit einem Schuss heißem Nudelwasser glattrühren und abseits der Flamme unter frische Tagliatelle heben. Mit Parmesan und schwarzem Pfeffer entsteht in Minuten eine cremige Trüffelpasta, ohne Sahne und ohne Aufwand. Wichtig ist nur das Timing — die Sauce kommt zuletzt dazu, nie mit ins kochende Wasser.
Aus Erfahrung: Rühren Sie die Black Truffle nie in heiße, kochende Gerichte — das flüchtige Trüffelaroma verfliegt mit dem Wasserdampf. Erst nach dem Garen aufs Gericht geben, dann bleibt der Duft dort, wo er hingehört. Auch beim Anrichten gilt: lieber ein sichtbarer Klecks am Tellerrand als untergerührt und unsichtbar — das Auge isst den Trüffel mit.
Ein Seemannsname, eine Manufaktur in Udenhout
Hinter der Marke Jean Bâton steht ein Küchenspitzname von hoher See. Jan Stok arbeitete ab den 1950er-Jahren als Chef Garde Manger auf den Schiffen der Holland America Line und verantwortete dort die kalten Saucen. Aus „Jan Stok" machten die französischen Küchenkollegen an Bord kurzerhand „Jean Bâton". Unter diesem Namen entstehen heute in einer kleinen Manufaktur im niederländischen Udenhout Mayonnaisen im Glas — die Trüffelvariante ist die bekannteste des Hauses. Die Rezeptur bleibt dabei der kalten Bordküche treu: viel Öl, Freilandeigelb, wenig Schnickschnack — und beim Trüffel keine halben Sachen.
Der verwendete Trüffel ist Tuber aestivum, der schwarze Sommertrüffel. Er wächst in lichten Laubwäldern Europas, meist unter Eichen und Buchen, und wird von Mai bis in den Herbst mit Hunden aufgespürt. Sein Aroma ist nussig-erdig und deutlich zugänglicher als das des teuren Wintertrüffels aus dem Périgord — genau das macht ihn zum idealen Kandidaten für eine Sauce, die öfter als zweimal im Jahr auf den Tisch soll.
Weil Trüffelaromen fettlöslich sind, ist eine Mayonnaise ein idealer Träger. Das Rapsöl nimmt die Aromastoffe auf und gibt sie mit jedem Bissen langsam wieder frei. Genau deshalb wirkt ein Löffel Trüffelmayonnaise intensiver als dieselbe Menge Trüffel auf trockenem Brot — das Fett verlängert den Geschmack, statt ihn zu verdünnen.
Sichtbarer Trüffel statt bloßem Aroma
Der Unterschied zu vielen günstigen Trüffelsaucen liegt im Glas selbst: 1,5 % echter Sommertrüffel, als dunkle Stücke erkennbar, nicht nur ein Duftstoff aus dem Labor. Das macht die Black Truffle zum unkompliziertesten Weg, Trüffel auf den Teller zu bringen — ohne Hobel, ohne Saisonkalender, ohne den Preis einer frischen Knolle.
Dazu passt ein Abend, der sich besonders anfühlen darf, ohne Aufwand zu machen: ein Steak zu zweit, ein spätes Sandwich nach Gästen, ein Teller Pasta am Freitag. Wo frischer Trüffel eine Inszenierung verlangt, genügt hier der Griff in den Kühlschrank. Genau darin liegt der Luxus dieser Sauce — sie macht das Außergewöhnliche alltagstauglich.

How it all began
Does this sound familiar? You return from vacation with a bottle of olive oil from Portugal in your suitcase, a jar of fruit spread from South Tyrol, perhaps a bar of chocolate from a small factory in France — and you ask yourself: Why can't I find something like this easily at home? We kept asking ourselves this question.
We are Kerstin and Stephan Uhlenbusch from Nordhorn, a city on the German-Dutch border. On our travels through Europe, we made the most wonderful culinary discoveries: mountain apple juices from the high altitudes of South Tyrol, Breton barrel butter, handmade pasta from Italy, French sea salt. It wasn't the big luxury products that fascinated us, but rather the honest, artisan-made foods from people who put their heart and soul into their products.
In 2002, we decided to turn this passion into our profession: to make good food accessible to everyone who cannot travel to the producers themselves. This is how our gourmet shipping business came into being — initially as a store in Nordhorn, soon after as one of the first gourmet online shops in Germany. Back then under the name nur Gutes (only good things) — today we continue it as genussland.de. The ambition has remained the same: this is where good taste resides.
Who we are
What drives us is the same curiosity with which we started in 2002: finding out who truly makes good food. Over more than two decades, we have built a network — with producers, traders, restaurateurs, and culinary artisans from all over Europe.
Kerstin was the managing director of the association of leading delicatessen merchants in Germany — the industry association of the country's best owner-managed delicatessen stores. In this role, she not only accompanied but actively shaped the German delicatessen industry. With the deli Festival, we also launched our own B2B trade fair for delicacies, which brought together producers, traders, and restaurateurs from all over Europe. The festival no longer exists today — but the relationships that arose from it still accompany us.
What does this mean for you? We know our industry like almost no one else. Chambers of commerce and economic development agencies from all over Europe repeatedly introduce us to exciting producers who want to offer their products on the German market. This way, genussland always offers something you won't find in any supermarket and hardly in any other shop.

Fruit spreads, aromatic honey, truffle delicacies, chutneys, and mustard sauces. Vintage sardines and fine canned fish, risotto rice, and handmade pasta — basic ingredients for honest cooking and specialties for special moments.
Our fresh delivery service brings the legendary Beurre Bordier from Brittany, Italian Burrata, and fine salami to your home — securely packaged and continuously chilled.
Wine is particularly close to our hearts: white wine from Rheinhessen and the Pfalz, red wine from Austria and Burgenland, rosé for barbecue season, natural wine for the adventurous, sparkling wine and champagne for special moments. Not from all over the world — but from winemakers we have personally visited and whose work we appreciate. Many of them work organically or biodynamically.
Our Philosophy
What makes a product a genussland product? We ask ourselves this question for every single item we add to our range. The answer is never one-dimensional – it's the combination of craftsmanship, origin, ingredients, and the people behind them.
We ask many questions before a product finds its way into our shop. How is it made? Where do the raw materials come from? What philosophy does the manufacturer pursue? We quickly notice whether we are hearing marketing clichés or if a producer is happy to explain their journey. It is precisely this enthusiasm that we seek – and repeatedly find.
Craftsmanship. We prefer products from small manufactories and family businesses that often produce their culinary treasures by hand for generations. The careful processing and artisanal skill can be tasted in every bite.
Best Ingredients. For us, good quality begins with the raw materials. Whether it's fruit, vegetables, milk, meat, or grain – we ensure that our manufacturers rely on first-class, as natural as possible, ingredients. Many of our producers are organically certified; our shop itself is organically controlled under the number DE-ÖKO-037.
Origin and Regionality. We appreciate products with a clear regional identity. A South Tyrolean mountain apple juice made from slowly ripened, old apple varieties. A Portuguese olive oil from trees that have shaped the landscape for centuries. These stories of origin make delicacies what they are.
Personal relationship with the manufacturer. We have known many of our suppliers personally for years, some for over two decades. We visit them, taste together, and exchange ideas. This proximity guarantees transparency and trust.
At the end of the day, it has to taste good. We try all products ourselves – not just once, but again and again while cooking, at the table, on the plate. Only what convinces us personally finds its way into the shop.

What brings us the most joy: We get to accompany passionate individuals on their journey. People whose drive it is to make a good product even better. Some have been with us since our founding - for over twenty years.
There's the South Tyrolean fruit farmer who presses mountain apple juice from old, slowly ripened apple varieties, unlike anything else. The Italian balsamic family who ages their vinegar in Modena for decades. The Breton butter manufactory whose hand-churned butter is on the menu of the best restaurants in Europe. The Danish licorice pioneer who reinvented a centuries-old specialty.
Behind every product in our shop stands a person, a family, a story. And it is precisely these stories that make the difference between an interchangeable food item and a true delicacy.

We are also happy to ship your orders to many European countries such as Austria, Netherlands, Belgium, Luxembourg, France, Spain, Portugal. Here, a minimum order value of 50 € applies. There is no free-delivery value. No shipping of products subject to excise duty (alcohol). Gross prices are adjusted to the individual VAT rates of the respective country. Sales tax will be charged in any case. The shipping price will be calculated at checkout and displayed before the order.
For international deliveries, shipping costs are calculated per package. (Maximum 18 bottles per package or 25kg). Shipping to certain areas or islands may incur additional costs, which we will inform you of before shipping. Remote areas cannot be supplied. No freight forwarding to islands.

Alcohol
