Sommer Spritz Sirup Hibiskus-Himbeere ist ein Aperitif-Sirup aus Himbeeren, Hibiskusblüten und naturtrübem Bio-Apfelessig — die erste Sorte der Sommer-Spritz-Linie. Kein Dressing-Sirup für den Salatteller, kein Beerenlikör, kein Sirup, der auf reines Wasser hin abgeschmeckt wäre.
Sommer Spritz Sirup Hibiskus-Himbeere ist der Aperitif-Sirup von Schusters Shrub, in dem eine Beere und eine Blüte streng getrennte Aufgaben übernehmen. Die klassischen Shrubs des Hauses zielen auf das Wasserglas und auf den Teller. Diese Linie zielt auf ein Glas, das bereits prickelt und eigene Säure mitbringt. Deshalb trägt sie deutlicher. Gießen Sie vier Zentiliter mit Prosecco auf, und das Rot steht im Glas, bevor am Tisch jemand nachgefragt hat.
Warum die Blüte hier keine Frucht ersetzt
Die Hibiskusblüte bringt weder Fruchtfleisch noch Beerenaroma mit. Sie liefert zwei andere Dinge, und beide sind eingeplant: Säure und Farbe.
Im Duft steht deshalb allein die Himbeere, reif und dicht, darunter der helle Zug des Apfelessigs. Am Gaumen kommt die Beere zuerst und breit. Dann setzt die Blütensäure ein, neben die sich die Essigsäure legt. Zwei Säuren aus zwei Quellen halten eine einzige Frucht in Form. Das erklärt, warum der Sirup selbst unter Sekt nicht ins Süßliche kippt.
Im Glas leuchtet er rubinrot, und dieses Rot stammt vollständig aus Beere und Blüte. Wer einen weichen, runden Himbeersirup erwartet, wird die Blütensäure als zu bestimmend empfinden. Sie steht vorn, und sie soll es. Für eine milde Limonade am Nachmittag ist diese Sorte nicht geeignet, dafür ist sie zu hoch angesetzt.
Vier Zentiliter auf Eis und eine Karaffe
Rechnen Sie vier Zentiliter auf ein Glas mit Eis und gießen Sie mit etwa 100 Millilitern auf.
Das ist die Dosierung der ganzen Linie, und sie liegt weit über der eines klassischen Shrubs. Der geht mit einem Teil auf zehn bis fünfzehn Teile ins Wasser. Schaumwein ist aber kein Wasser. Er bringt Kohlensäure mit, eigene Säure und eigenen Geschmack. Gegen so viel Gegenwehr muss ein Sirup lauter sprechen.
Alkoholfrei nehmen Sie alkoholfreien Schaumwein und einen Schuss Soda, mit Alkohol Prosecco. Für eine Runde Gäste setzen Sie eine Karaffe an: 8 cl Shrub, 400 ml Orangensaft, eine Flasche Soda, ein paar Orangenscheiben, reichlich Eis. Mit Lillet ergibt sich die natürliche Variante des bekannten Beeren-Aperitifs, ohne Aroma und ohne Farbstoff. Alkoholfrei geht derselbe Sirup als abgewandelter Virgin Mojito ins Glas, mit Limette und Minze.
Gut zu wissen: Die Flasche gehört in den dunklen Schrank. Ohne Farbstoff hat das Rot nichts, was es festhält, und zieht über die Monate ins Bräunliche. Am Geschmack ändert das nichts, am Bild im Glas schon. Zimmertemperatur verträgt die angebrochene Flasche problemlos, dafür sorgt die Säure. Wer den Beerenweg ohne Blüte gehen möchte, findet ihn beim sortenreinen Shrub für Küche und Wasserglas.
Zwei Rohstoffe, ein Auszug, kein Farbstoff
Himbeeren und Hibiskusblüten liegen gemeinsam vier bis sechs Wochen im naturtrüben Bio-Apfelessig. Beide geben Farbe ab, und beide geben sie vollständig ab.
Das ist der Grund, warum am Ende kein Farbstoff nötig ist, und zugleich der Grund für den dunklen Schrank. Ein Rot aus Pflanzenteilen ist nicht dafür gebaut, jahrelang gleich auszusehen. Ein zugesetzter Farbstoff wäre genau dafür gebaut. Die Manufaktur nimmt lieber die Verfärbung in Kauf als den Zusatz.
Nach dem Auszug werden Beere und Blüte abgepresst. Der Fruchtessig bekommt so viel Zucker, bis Frucht, Blüte und Säure zusammenstehen, und wandert siedend heiß in die Flasche. Danach hält sie rund drei Jahre, und ein Konservierungsstoff wird dafür nicht gebraucht.
Untersteinbach im Steigerwald ist der Ort, an dem Hanna und Gabi Schuster seit 2012 produzieren. Die Sommer-Spritz-Linie ist dort die jüngere Entwicklung neben den klassischen Shrubs, und diese Sorte stand an ihrem Anfang. Eine neue Rezeptur geht im Haus erst in Produktion, wenn die ganze Familie sie verkostet hat.
Der Prototyp einer Linie fürs Glas
Diese Sorte hat die Frage beantwortet, an der die ganze Linie hängt. Wie schmeckt ein Shrub, der nicht ins Wasser geht, sondern in ein Glas Sekt?
Die Antwort lautete: säurebetonter, höher dosiert, mit einer zweiten Säurequelle neben dem Essig. Was danach kam, folgt dieser Vorgabe. Die herbe Sorte der Linie mit echter Bitternote geht denselben Weg über die Grapefruit. Als Mitbringsel für Gastgeber ist die Hibiskus-Himbeere die verlässlichste der drei, weil sie am wenigsten Erklärung braucht. Eine Flasche steht auf dem Tisch, daneben Sekt und Soda, und die Gäste bedienen sich selbst. Die eine Zahl, die Sie dabei im Blick behalten sollten, sind knapp 61 Gramm Zucker je 100 Milliliter. Vier Zentiliter pro Glas sind die Rechnung, nicht die Flasche.
Der Sirup, mit dem die Manufaktur das Aperitifglas ernst zu nehmen begann — und der bis heute die Messlatte der Linie vorgibt.

How it all began
Does this sound familiar? You return from vacation with a bottle of olive oil from Portugal in your suitcase, a jar of fruit spread from South Tyrol, perhaps a bar of chocolate from a small factory in France — and you ask yourself: Why can't I find something like this easily at home? We kept asking ourselves this question.
We are Kerstin and Stephan Uhlenbusch from Nordhorn, a city on the German-Dutch border. On our travels through Europe, we made the most wonderful culinary discoveries: mountain apple juices from the high altitudes of South Tyrol, Breton barrel butter, handmade pasta from Italy, French sea salt. It wasn't the big luxury products that fascinated us, but rather the honest, artisan-made foods from people who put their heart and soul into their products.
In 2002, we decided to turn this passion into our profession: to make good food accessible to everyone who cannot travel to the producers themselves. This is how our gourmet shipping business came into being — initially as a store in Nordhorn, soon after as one of the first gourmet online shops in Germany. Back then under the name nur Gutes (only good things) — today we continue it as genussland.de. The ambition has remained the same: this is where good taste resides.
Who we are
What drives us is the same curiosity with which we started in 2002: finding out who truly makes good food. Over more than two decades, we have built a network — with producers, traders, restaurateurs, and culinary artisans from all over Europe.
Kerstin was the managing director of the association of leading delicatessen merchants in Germany — the industry association of the country's best owner-managed delicatessen stores. In this role, she not only accompanied but actively shaped the German delicatessen industry. With the deli Festival, we also launched our own B2B trade fair for delicacies, which brought together producers, traders, and restaurateurs from all over Europe. The festival no longer exists today — but the relationships that arose from it still accompany us.
What does this mean for you? We know our industry like almost no one else. Chambers of commerce and economic development agencies from all over Europe repeatedly introduce us to exciting producers who want to offer their products on the German market. This way, genussland always offers something you won't find in any supermarket and hardly in any other shop.

An extra virgin olive oil from Portugal, a genuine Aceto Balsamico from Modena, Fleur de Sel from the Breton coast, hand-mixed spice blends. Fruit spreads, aromatic honey, truffle delicacies, chutneys, and mustard sauces. Vintage sardines and fine canned fish, risotto rice, and handmade pasta — basic ingredients for honest cooking and specialties for special moments.
Our fresh delivery service brings the legendary Beurre Bordier from Brittany, Italian Burrata, and fine salami to your home — securely packaged and continuously chilled.
Wine is particularly close to our hearts: white wine from Rheinhessen and the Pfalz, red wine from Austria and Burgenland, rosé for barbecue season, natural wine for the adventurous, sparkling wine and champagne for special moments. Not from all over the world — but from winemakers we have personally visited and whose work we appreciate. Many of them work organically or biodynamically.
Our Philosophy
What makes a product a genussland product? We ask ourselves this question for every single item we add to our range. The answer is never one-dimensional – it's the combination of craftsmanship, origin, ingredients, and the people behind them.
We ask many questions before a product finds its way into our shop. How is it made? Where do the raw materials come from? What philosophy does the manufacturer pursue? We quickly notice whether we are hearing marketing clichés or if a producer is happy to explain their journey. It is precisely this enthusiasm that we seek – and repeatedly find.
Craftsmanship. We prefer products from small manufactories and family businesses that often produce their culinary treasures by hand for generations. The careful processing and artisanal skill can be tasted in every bite.
Best Ingredients. For us, good quality begins with the raw materials. Whether it's fruit, vegetables, milk, meat, or grain – we ensure that our manufacturers rely on first-class, as natural as possible, ingredients. Many of our producers are organically certified; our shop itself is organically controlled under the number DE-ÖKO-037.
Origin and Regionality. We appreciate products with a clear regional identity. A South Tyrolean mountain apple juice made from slowly ripened, old apple varieties. A Portuguese olive oil from trees that have shaped the landscape for centuries. These stories of origin make delicacies what they are.
Personal relationship with the manufacturer. We have known many of our suppliers personally for years, some for over two decades. We visit them, taste together, and exchange ideas. This proximity guarantees transparency and trust.
At the end of the day, it has to taste good. We try all products ourselves – not just once, but again and again while cooking, at the table, on the plate. Only what convinces us personally finds its way into the shop.

What brings us the most joy: We get to accompany passionate individuals on their journey. People whose drive it is to make a good product even better. Some have been with us since our founding - for over twenty years.
There's the South Tyrolean fruit farmer who presses mountain apple juice from old, slowly ripened apple varieties, unlike anything else. The Italian balsamic family who ages their vinegar in Modena for decades. The Breton butter manufactory whose hand-churned butter is on the menu of the best restaurants in Europe. The Danish licorice pioneer who reinvented a centuries-old specialty.
Behind every product in our shop stands a person, a family, a story. And it is precisely these stories that make the difference between an interchangeable food item and a true delicacy.

International Shipping Costs
We are also happy to ship your orders to many European countries such as Austria, Netherlands, Belgium, Luxembourg, France, Spain, Portugal. Here, a minimum order value of 50 € applies. There is no free-delivery value. No shipping of products subject to excise duty (alcohol). Gross prices are adjusted to the individual VAT rates of the respective country. Sales tax will be charged in any case. The shipping price will be calculated at checkout and displayed before the order.
For international deliveries, shipping costs are calculated per package. (Maximum 18 bottles per package or 25kg). Shipping to certain areas or islands may incur additional costs, which we will inform you of before shipping. Remote areas cannot be supplied. No freight forwarding to islands.
For international deliveries, providing the recipient's telephone number with the order is mandatory. (The specification of a telephone number is obligatory for orders abroad.)
Alcohol
Alcohol is only shipped to adults via UPS or DHL; the delivery person will verify age upon delivery. By ordering alcohol, you also confirm that you or the recipient are of legal age.
Shipping Service
For manual creation of shipping labels (for orders by phone, email, or by submitting addresses via spreadsheet), we charge an additional 2.50 € per shipping label for this service, in addition to the stated shipping costs.
Please note that we cannot combine orders already placed.
Investigation of failed payments
For the investigation and refund of payments incorrectly made to us, we charge a processing fee of 5.00 €.
