Questions about AP Apple in Port-style?

AP Apple Port-Style – Sweet Wine – Jörg Geiger Manufactory

The Jörg Geiger Manufactory's AP Apple Port-Style is a sweet wine aged in wooden barrels, made from apples from the Swabian Jura. It is a partially fermented apple wine fortified with apple brandy. The AP's aroma resembles an old port wine, which is why some call it apple port. In its high-quality gift packaging, the Geiger AP makes an elegant gift for port wine fans and fruit brandy drinkers.

How the Geiger AP – Apple Port-Style is Made

For the AP, Jörg Geiger selects old apple varieties from the Swabian Jura. According to an old recipe, these are first allowed to "sweat" to develop their full aroma and fragrance. Only then are they gently pressed before the concentrated sweet juice is allowed to ferment. To preserve the natural sweetness and intense fruitiness, he stops the fermentation with high-proof pure apple brandy, resulting in an alcohol content of around 18% vol.

This is followed by at least 18 months of storage in new chestnut barrels and, for a large part, in used Sauternes barrels, which allow the AP to mature while imparting the fragrance of great sweet wines without making the wood too prominent. Through oxidative aging, the AP loses about 5% of its alcohol and one-eighth of its volume in the barrel. With around 18% vol. alcohol, it is pleasant to drink.

Strong amber color with golden reflections. Creamy ripe apple nose and concentrated caramel notes, sweet-fruity components combine with hints of macadamia nut and a touch of vanilla. Taste: Full-bodied sweetness on the palate is balanced by the acidity of the apple and the powerful alcohol. Soft, round, vanilla-like woody notes caress the fresh fruitiness of fully ripe apples, candied fruits, and a touch of honey. The finish is a long, fruit-driven aftertaste.

The initial taste reveals sweet apple, refreshed by subtle floral citrus notes, as in the nose. The mid-palate is softly enveloped by harmoniously integrated alcohol, allowing the AP to finish honey-like in a long aftertaste with subtle tart notes reminiscent of apple peels.

The most obvious pairing: warm apple pie with vanilla ice cream. Asian-spiced duck or poultry; chocolate desserts (from white to dark), enjoyed neat or as an aperitif.

Jörg Geiger Manufactory – Sweet Wines and Fruit Brandies

The Jörg Geiger Manufactory is located in the small community of Schlat, eight kilometers southeast of Göppingen, in the heart of the Swabian Jura. Here, in this unique cultural landscape characterized by mountainous forests, juniper heaths, and scattered orchards with fruit trees sometimes over 100 years old, is the home of Jörg Geiger and his manufactory.

The youthful-looking Jörg Geiger grew up in his parents' restaurant, the over 300-year-old Gasthof Lamm. In addition to the successful restaurant, his father operated a small distillery, producing single-varietal distillates such as the Stuttgarter Gaishirtle – a true rarity from an old pear variety. The passion for distilling and preserving old varieties was passed from father to son. Since 1994, Jörg Geiger has continued to run the inn and fruit distillery. Although he has become known for his sparkling wine from the Champagne Bratbirne and his non-alcoholic Prisecco, his fruit brandies also deserve attention, as do these special sweet wines made from fruit from Swabian scattered orchards, self-distilled fruit brandies, and plenty of time and patience to mature in old wooden barrels.
