Pistachio cream from Sicily is a sweet spread made with 35 percent roasted pistachios, curated by Antica Bottega Siciliana from Trapani. Not a pure pistachio butter, not a savory seasoning pesto, and not a short-lived trend product.
Pistachio cream from Sicily is a sweet spread from Antica Bottega Siciliana made from roasted Sicilian pistachios with a soft milky note. It combines roasted aroma and a delicate melt into a dense, spoonable cream. This green cream is currently considered a trendy ingredient – on cakes, in chocolate bars, in every second food video. In the bars between Palermo and Catania, however, it has been calmly nestled in a cornetto for decades. There, it's not a hype, but simply breakfast. Exactly this matter-of-factness is what's in the small jar from Sicily's west coast. The recipe comes from traditional peasant heritage and remains deliberately simple.
How pistachio cream with 35 percent pistachios tastes
This cream tastes warm and roasty of pistachio, carried by a present sweetness and a melt like soft buttercream. In the jar, it appears in a muted pistachio green, thick and shiny. When opened, an aroma of roasted kernels and fresh pastries rises.
On the tongue, the sweetness comes first, then the roasted aroma of the kernels. In the finish, a delicate, slightly tart note lingers – the memory of the thin skin of the pistachio. The texture is spreadable without flowing and glides smoothly onto warm pastries.
The sweetness is distinct and belongs to this type of cream, similar to a classic nut cream. A thin layer is sufficient, an espresso alongside it balances it elegantly. Try the cream at room temperature, as when chilled it appears firmer and more closed. At about 20 °C, the roasted aroma fully develops. A side note: Sicilian pistachios are considered particularly green because their kernels store a strikingly large amount of chlorophyll.
For an honest assessment: Sicilian pistachio creams contain between 30 and 65 percent pistachios, depending on the recipe. With 35 percent, this cream is in the reliable mid-range – milder and sweeter than highly concentrated varieties, but smoother and more accessible. Those expecting pure pistachio butter, for example for patisserie, will not find it here. This spread is intended as a sweet everyday treat, not as a raw material for professionals.
From Cornetto to Five-Minute Dessert
The cream belongs where sweetness is desired: on warm pastries, over ice cream, in quick desserts. The classic is the Cornetto al Pistacchio, as served in every Sicilian bar. Cut a croissant open and bake it for five minutes at 160 °C. Generally, choose light, mild pastries as a base. Strong sourdough bread or whole wheat would overshadow the delicate pistachio aroma. Then spread a heaped teaspoon of cream inside – the warmth makes it soft and fragrant.
For a quick dolce, mix two tablespoons of cream with 250g mascarpone and a splash of cream. Poured into glasses and sprinkled with chopped pistachios, a dessert is on the table in five minutes. Over vanilla ice cream, the cream becomes pourable if the jar has been briefly placed in warm water beforehand. In crêpes or pancakes, it replaces any nougat cream. And for a crostata, spread a good half-jar on the shortcrust pastry base before placing the lattice topping.
Even beyond the classics, experimenting is worthwhile. A teaspoon in warm porridge melts into a green swirl that perfumes the entire breakfast. Stuffed dates with a dab of cream and sea salt flakes are ready in two minutes. And an affogato gets a Sicilian twist when a spoonful of cream waits on the ice cream beneath the hot espresso.
Good to know: This sweet cream is not intended for pasta, crostini, and other savory dishes. That role is taken by the savory pistachio pesto from the same producer. The 100 grams may seem small, but they are enough for eight to ten filled croissants. Use sparingly and add more if needed.

Behind Antica Bottega Siciliana is not a manufacturer, but a curator. Salvatore Novara collects specialties from small Sicilian producers from Trapani. Honey, jam, pesto, sweet creams – whatever makes it into the assortment follows traditional peasant recipes. The brand brings together what scattered family businesses on the island have been producing for generations. This way, products reach the market that would otherwise barely make it beyond Sicily on their own. Trapani is located in the far west of the island, between salt pans, vineyards, and the sea. From here, Novara organizes what is handmade elsewhere in Sicily.
For the cream, the shelled kernels are roasted and then finely ground. Only through long stirring does the released pistachio oil combine with the other components to form a smooth, spreadable mass. The finer the grinding, the silkier the melt – a craftsmanship step that requires patience and pays off on the palate.
The pistachios themselves come from the east of the island, from the cultivation area around Etna. There, according to old practice, the pistachio tree only yields a full harvest every other year. In the intermediate year, farmers break off the buds so that the tree can gather strength for the next cycle. Harvesting takes place in September, by hand – no machine can navigate the rugged lava terraces. This scarcity explains why Sicilians call their pistachio "oro verde": green gold. And why its aroma seems denser than that of goods from large irrigation plantations. In Sicily's patisseries, pistachios have always found their way into cassata, granita, and gelato. The cream in the jar is the household-friendly short version of this dessert tradition.

How it all began
Does this sound familiar? You return from vacation with a bottle of olive oil from Portugal in your suitcase, a jar of fruit spread from South Tyrol, perhaps a bar of chocolate from a small factory in France — and you ask yourself: Why can't I find something like this easily at home? We kept asking ourselves this question.
We are Kerstin and Stephan Uhlenbusch from Nordhorn, a city on the German-Dutch border. On our travels through Europe, we made the most wonderful culinary discoveries: mountain apple juices from the high altitudes of South Tyrol, Breton barrel butter, handmade pasta from Italy, French sea salt. It wasn't the big luxury products that fascinated us, but rather the honest, artisan-made foods from people who put their heart and soul into their products.
In 2002, we decided to turn this passion into our profession: to make good food accessible to everyone who cannot travel to the producers themselves. This is how our gourmet shipping business came into being — initially as a store in Nordhorn, soon after as one of the first gourmet online shops in Germany. Back then under the name nur Gutes (only good things) — today we continue it as genussland.de. The ambition has remained the same: this is where good taste resides.
Who we are
What drives us is the same curiosity with which we started in 2002: finding out who truly makes good food. Over more than two decades, we have built a network — with producers, traders, restaurateurs, and culinary artisans from all over Europe.
Kerstin was the managing director of the association of leading delicatessen merchants in Germany — the industry association of the country's best owner-managed delicatessen stores. In this role, she not only accompanied but actively shaped the German delicatessen industry. With the deli Festival, we also launched our own B2B trade fair for delicacies, which brought together producers, traders, and restaurateurs from all over Europe. The festival no longer exists today — but the relationships that arose from it still accompany us.
What does this mean for you? We know our industry like almost no one else. Chambers of commerce and economic development agencies from all over Europe repeatedly introduce us to exciting producers who want to offer their products on the German market. This way, genussland always offers something you won't find in any supermarket and hardly in any other shop.

An extra virgin olive oil from Portugal, a genuine Aceto Balsamico from Modena, Fleur de Sel from the Breton coast, hand-mixed spice blends. Fruit spreads, aromatic honey, truffle delicacies, chutneys, and mustard sauces. Vintage sardines and fine canned fish, risotto rice, and handmade pasta — basic ingredients for honest cooking and specialties for special moments.
Our fresh delivery service brings the legendary Beurre Bordier from Brittany, Italian Burrata, and fine salami to your home — securely packaged and continuously chilled.
Wine is particularly close to our hearts: white wine from Rheinhessen and the Pfalz, red wine from Austria and Burgenland, rosé for barbecue season, natural wine for the adventurous, sparkling wine and champagne for special moments. Not from all over the world — but from winemakers we have personally visited and whose work we appreciate. Many of them work organically or biodynamically.
Our Philosophy
What makes a product a genussland product? We ask ourselves this question for every single item we add to our range. The answer is never one-dimensional – it's the combination of craftsmanship, origin, ingredients, and the people behind them.
We ask many questions before a product finds its way into our shop. How is it made? Where do the raw materials come from? What philosophy does the manufacturer pursue? We quickly notice whether we are hearing marketing clichés or if a producer is happy to explain their journey. It is precisely this enthusiasm that we seek – and repeatedly find.
Craftsmanship. We prefer products from small manufactories and family businesses that often produce their culinary treasures by hand for generations. The careful processing and artisanal skill can be tasted in every bite.
Best Ingredients. For us, good quality begins with the raw materials. Whether it's fruit, vegetables, milk, meat, or grain – we ensure that our manufacturers rely on first-class, as natural as possible, ingredients. Many of our producers are organically certified; our shop itself is organically controlled under the number DE-ÖKO-037.
Origin and Regionality. We appreciate products with a clear regional identity. A South Tyrolean mountain apple juice made from slowly ripened, old apple varieties. A Portuguese olive oil from trees that have shaped the landscape for centuries. These stories of origin make delicacies what they are.
Personal relationship with the manufacturer. We have known many of our suppliers personally for years, some for over two decades. We visit them, taste together, and exchange ideas. This proximity guarantees transparency and trust.
At the end of the day, it has to taste good. We try all products ourselves – not just once, but again and again while cooking, at the table, on the plate. Only what convinces us personally finds its way into the shop.

There's the South Tyrolean fruit farmer who presses mountain apple juice from old, slowly ripened apple varieties, unlike anything else. The Italian balsamic family who ages their vinegar in Modena for decades. The Breton butter manufactory whose hand-churned butter is on the menu of the best restaurants in Europe. The Danish licorice pioneer who reinvented a centuries-old specialty.

Refrigerated Shipping
Our product range includes food items that react differently to heat. To ensure that every product arrives in perfect condition, we handle the shipping of two product groups with particular care.
Products requiring refrigeration
These items are marked with the note "kühlpflichtig" (requires refrigeration) in our shop — for example, Bordier butter, Parmigiano Reggiano from Cavola 993, Pancetta and Guanciale from Falorni, mountain herb ham and Tyrolean dumplings from Steiner, Prosciutto Crudo and truffle butter from Viani. We generally ship these products by express delivery with ice packs. They are only available via express shipping. The shipping costs will be clearly displayed before you complete your order at checkout.
Temperature-sensitive products
These items are marked with the note "temperaturempfindlich" (temperature-sensitive) — for example, salami and bacon specialties from Falorni and Steiner, as well as Goufrais cocoa confectionery. In cooler weather, they can be sent by standard shipping. In warmer weather, we switch the shipping to express shipping with ice packs before checkout — in this case, this shipping method is the only option, and the corresponding shipping costs will be displayed at checkout.
Shipping days for refrigerated and temperature-sensitive orders
To prevent any package from remaining in a distribution center over the weekend or public holidays, we only ship refrigerated orders from Monday to Thursday. Orders placed after Thursday will generally not be shipped until the following Monday. In summer, this rule also applies to temperature-sensitive products.
Packaging
Depending on the manufacturer, sausage and cheese specialties are supplied either vacuum-packed or traditionally without foil — for example, Italian salami from Falorni. If air is visible in a vacuum package upon delivery, this is not a quality defect. Please unpack the item and store it in the refrigerator, ideally wrapped in sausage paper or greaseproof paper.
Freight Forwarding
Freight forwarding is used for products that cannot be delivered as a package due to their size or weight. The selection is made automatically before completing the order. Please provide your phone number for scheduling the freight forwarding delivery.

Currently, we only ship within Germany. Shipping to Austria is in preparation — as soon as we can deliver there, you will find the details here.
Products subject to excise duty (alcohol) cannot be shipped to Austria.
Alcohol
Alcohol can only be shipped to adults. The deliverer will verify age upon delivery. By ordering alcohol, you also confirm that you or the recipient are of legal age.

For manual creation of shipping labels, we charge an additional €2.50 per shipping label in addition to the stated shipping costs. Please note that we cannot retrospectively combine orders that have already been placed.
