Bio Vollmilchschokolade Tonkabohne gefüllt ist eine Tafel von Berger Confiserie aus Lofer, deren Vollmilchhülle einen weichen Ganache-Kern mit echter Tonkabohne umschließt. Keine Fruchtfüllung, keine Vanilleschokolade, kein Knuspereinsatz, sondern ein Konfekt in Tafelform.
Bio Vollmilchschokolade Tonkabohne gefüllt ist eine gefüllte Vollmilchschokolade mit 37 Prozent Kakao von Berger Confiserie, deren Kern aus einer Sahne-Ganache mit geriebener Tonkabohne besteht. Wer Vanille erwartet, wird beim ersten Stück kurz stutzen. Das Aroma beginnt zwar dort, wo Vanille aufhört, zieht dann aber weiter in Richtung Bittermandel, Heu und einer Spur Zimt. Die Hülle schmilzt mild und milchig, der Kern bleibt cremig und trägt das Gewürz bis in den Abgang. Eine Tafel für Menschen, die Schokolade lieber würzig als fruchtig mögen.
Warm, würzig und deutlich länger als die Hülle
Die Tonkabohne schmeckt in dieser Tafel nach Vanille, Marzipan und Heu, mit einer leisen Bitterkeit gegen die Süße der Vollmilch. Zuerst ist da nur die Hülle: mild, rund, mit dem typischen Milchschmelz, den Berger in Lofer conchiert. Dann öffnet sich der Kern, und die Ganache legt sich seidig über die Zunge. Beim Abbrechen riecht die Tafel zunächst nur nach Milchschokolade. Erst die angeschnittene Ganache gibt den warmen, fast harzigen Duft frei, der an eine frisch geöffnete Vanilledose erinnert, nur dunkler.
Das Gewürz kommt nicht als Schlag, sondern als Welle. Es baut sich langsam auf, erreicht seinen Höhepunkt, wenn die Schokolade schon fast verschwunden ist, und hält dann noch eine halbe Minute nach. Genau darin unterscheidet sich Tonka von Vanille, die nach dem Schlucken schnell verstummt. Der Nachhall ist warm, leicht herb und erinnert entfernt an Mandelkerne.
Wer eine fruchtige oder knusprige Tafel erwartet, wird diese als zu einförmig empfinden. Es gibt keine Stückchen, keinen Biss, nur zwei Texturen: die feste Hülle und den weichen Kern. Wer Tonkabohne bisher nur aus Desserts kennt, sollte mit einem einzelnen Rippchen beginnen. Das Aroma ist präsent, und drei Rippen hintereinander wird mancher als zu parfümiert empfinden. Für Kinder, die Schokolade vor allem süß und milchig mögen, ist das Gewürz eher eine Einschränkung als ein Reiz.
Ein Rippchen zum Espresso, ein Stück auf den Kaiserschmarrn
Die Tafel entfaltet ihre Würze bei Zimmertemperatur, wenn der Ganache-Kern weich geworden ist und sich beim Abbrechen leicht wölbt. Direkt aus dem Kühlschrank bleibt der Kern fest und das Gewürz verschlossen. Nehmen Sie die Tafel deshalb zwanzig Minuten vor dem Servieren aus der Vorratskammer, brechen Sie die Rippen entlang der Rillen und lassen Sie jedes Stück auf der Zunge schmelzen, statt zu kauen.
Zum Espresso passt ein Rippchen besser als jedes Gebäck: Die Röstbitterkeit des Kaffees und die Bittermandelnote der Tonka greifen ineinander. Ein Glas gereifter Rum oder ein Brandy mit Vanillenote ergänzen die Ganache um Holz und Wärme. Auf einem warmen Kaiserschmarrn oder über einer Kugel Vanilleeis schmilzt ein Stück binnen Sekunden und verteilt Gewürz und Milch über den ganzen Teller. Zu in Butter gebratenen Birnenspalten, mit etwas braunem Zucker karamellisiert, legen Sie zwei Rippen auf die noch heißen Früchte und servieren, sobald der Kern zu laufen beginnt. Wer die Bohne selbst in der Küche einsetzen möchte, findet sie als ganze Tonkabohnen zum Reiben.
Gut zu wissen: Zum Backen, Temperieren oder als Kuvertüre ist diese Tafel nicht geeignet. Die Sahnefüllung trennt sich beim Erhitzen von der Kakaobutter und wird grießig. Für Glasuren und Ganachen greifen Sie zur ungefüllten Vollmilchschokolade desselben Hauses und würzen selbst mit einer Prise geriebener Tonka.
Warum eine Ganache Zeit braucht, bevor sie in die Form darf
Berger Confiserie begann 1994 in einer Garage in Lofer, wo Hubert und Christine Berger zuerst Pralinen füllten, lange bevor die erste Tafel entstand. Heute arbeiten im Saalachtal mehr als hundert Menschen, und die Ganache ist noch immer der Kern des Handwerks. Sechsmal im Jahr bringt das Haus eine neue Kollektion heraus, und die gefüllten Tafeln stammen aus derselben Werkstatt wie die Pralinen. Eine gefüllte Tafel ist bei Berger deshalb keine verkleinerte Praline, sondern eine vergrößerte: dieselbe Füllung, nur in einer Form, die sich in Rippen brechen lässt.
Eine Ganache ist eine Emulsion aus Sahne und Schokolade, bei der Fett und Wasser sich verbinden müssen, ohne sich wieder zu trennen. Bei Berger wird die Sahne erhitzt, die geriebene Tonkabohne darin gezogen und die Masse anschließend mit Kakaobutter und Vollmilchmasse verrührt. Das Aroma der Tonka ist fettlöslich. Es wandert erst mit der Zeit aus der Bohne in die Sahne, weshalb die Füllung ruhen muss, bevor sie in die vorgegossene Vollmilchhülle kommt.
Die Bohne selbst ist der Samen des südamerikanischen Tonkabaums, schwarz, runzelig und so aromastark, dass 0,03 Prozent für eine ganze Tafel ausreichen. Ihr Duftstoff ist derselbe, der auch Waldmeister und frisch gemähtes Heu prägt, was den Eindruck von Sommerwiese in der Ganache erklärt. Konditoren reiben sie wie Muskat über einer feinen Reibe und dosieren in Bruchteilen eines Gramms. Zu wenig, und vom Gewürz bleibt nur ein Hauch Vanille. Zu viel, und die Ganache kippt ins Seifige. Die Kunst liegt im Maß, nicht in der Menge.
Eine Tafel für den Gewürzschrank, nicht für die Obstschale
Die meisten gefüllten Vollmilchtafeln setzen auf Frucht oder Nuss, diese hier auf ein einzelnes Gewürz, das für sich allein steht. Tonka ist in der gehobenen Patisserie seit Jahren präsent, in der Tafelschokolade aber selten, weil das Aroma schwer zu dosieren ist. Berger hat sich für eine spürbare, aber nicht dominante Menge entschieden, sodass die Vollmilch erkennbar bleibt und das Gewürz nicht zum Parfüm wird.
Als Geschenk richtet sich die Tafel an Menschen, die Vanille längst für zu brav halten und in der Küche mit Kardamom, Zimt und Sternanis arbeiten. Zu einem Abendessen passt sie als kleiner Abschluss nach dem Dessert, in zwei Rippchen geteilt, neben einem kurzen Espresso. Auch in einer Auswahl für den Käseteller hat sie ihren Platz, neben einem gereiften Bergkäse, dessen Salz die Würze der Ganache aufnimmt. Wer eine Auswahl verschenken will, kombiniert sie mit einer fruchtigen Schwester wie der Vollmilch mit Himbeerstückchen, damit am Tisch zwei Temperamente zur Wahl stehen.

How it all began
Does this sound familiar? You return from vacation with a bottle of olive oil from Portugal in your suitcase, a jar of fruit spread from South Tyrol, perhaps a bar of chocolate from a small factory in France — and you ask yourself: Why can't I find something like this easily at home? We kept asking ourselves this question.
We are Kerstin and Stephan Uhlenbusch from Nordhorn, a city on the German-Dutch border. On our travels through Europe, we made the most wonderful culinary discoveries: mountain apple juices from the high altitudes of South Tyrol, Breton barrel butter, handmade pasta from Italy, French sea salt. It wasn't the big luxury products that fascinated us, but rather the honest, artisan-made foods from people who put their heart and soul into their products.
In 2002, we decided to turn this passion into our profession: to make good food accessible to everyone who cannot travel to the producers themselves. This is how our gourmet shipping business came into being — initially as a store in Nordhorn, soon after as one of the first gourmet online shops in Germany. Back then under the name nur Gutes (only good things) — today we continue it as genussland.de. The ambition has remained the same: this is where good taste resides.
Who we are
What drives us is the same curiosity with which we started in 2002: finding out who truly makes good food. Over more than two decades, we have built a network — with producers, traders, restaurateurs, and culinary artisans from all over Europe.
Kerstin was the managing director of the association of leading delicatessen merchants in Germany — the industry association of the country's best owner-managed delicatessen stores. In this role, she not only accompanied but actively shaped the German delicatessen industry. With the deli Festival, we also launched our own B2B trade fair for delicacies, which brought together producers, traders, and restaurateurs from all over Europe. The festival no longer exists today — but the relationships that arose from it still accompany us.
What does this mean for you? We know our industry like almost no one else. Chambers of commerce and economic development agencies from all over Europe repeatedly introduce us to exciting producers who want to offer their products on the German market. This way, genussland always offers something you won't find in any supermarket and hardly in any other shop.

An extra virgin olive oil from Portugal, a genuine Aceto Balsamico from Modena, Fleur de Sel from the Breton coast, hand-mixed spice blends. Fruit spreads, aromatic honey, truffle delicacies, chutneys, and mustard sauces. Vintage sardines and fine canned fish, risotto rice, and handmade pasta — basic ingredients for honest cooking and specialties for special moments.
Our fresh delivery service brings the legendary Beurre Bordier from Brittany, Italian Burrata, and fine salami to your home — securely packaged and continuously chilled.
Wine is particularly close to our hearts: white wine from Rheinhessen and the Pfalz, red wine from Austria and Burgenland, rosé for barbecue season, natural wine for the adventurous, sparkling wine and champagne for special moments. Not from all over the world — but from winemakers we have personally visited and whose work we appreciate. Many of them work organically or biodynamically.
Our Philosophy
What makes a product a genussland product? We ask ourselves this question for every single item we add to our range. The answer is never one-dimensional – it's the combination of craftsmanship, origin, ingredients, and the people behind them.
We ask many questions before a product finds its way into our shop. How is it made? Where do the raw materials come from? What philosophy does the manufacturer pursue? We quickly notice whether we are hearing marketing clichés or if a producer is happy to explain their journey. It is precisely this enthusiasm that we seek – and repeatedly find.
Craftsmanship. We prefer products from small manufactories and family businesses that often produce their culinary treasures by hand for generations. The careful processing and artisanal skill can be tasted in every bite.
Best Ingredients. For us, good quality begins with the raw materials. Whether it's fruit, vegetables, milk, meat, or grain – we ensure that our manufacturers rely on first-class, as natural as possible, ingredients. Many of our producers are organically certified; our shop itself is organically controlled under the number DE-ÖKO-037.
Origin and Regionality. We appreciate products with a clear regional identity. A South Tyrolean mountain apple juice made from slowly ripened, old apple varieties. A Portuguese olive oil from trees that have shaped the landscape for centuries. These stories of origin make delicacies what they are.
Personal relationship with the manufacturer. We have known many of our suppliers personally for years, some for over two decades. We visit them, taste together, and exchange ideas. This proximity guarantees transparency and trust.
At the end of the day, it has to taste good. We try all products ourselves – not just once, but again and again while cooking, at the table, on the plate. Only what convinces us personally finds its way into the shop.

What brings us the most joy: We get to accompany passionate individuals on their journey. People whose drive it is to make a good product even better. Some have been with us since our founding - for over twenty years.
There's the South Tyrolean fruit farmer who presses mountain apple juice from old, slowly ripened apple varieties, unlike anything else. The Italian balsamic family who ages their vinegar in Modena for decades. The Breton butter manufactory whose hand-churned butter is on the menu of the best restaurants in Europe. The Danish licorice pioneer who reinvented a centuries-old specialty.
Behind every product in our shop stands a person, a family, a story. And it is precisely these stories that make the difference between an interchangeable food item and a true delicacy.

Refrigerated Shipping
Our product range includes food items that react differently to heat. To ensure that every product arrives in perfect condition, we handle the shipping of two product groups with particular care.
Products requiring refrigeration
These items are marked with the note "kühlpflichtig" (requires refrigeration) in our shop — for example, Bordier butter, Parmigiano Reggiano from Cavola 993, Pancetta and Guanciale from Falorni, mountain herb ham and Tyrolean dumplings from Steiner, Prosciutto Crudo and truffle butter from Viani. We generally ship these products by express delivery with ice packs. They are only available via express shipping. The shipping costs will be clearly displayed before you complete your order at checkout.
Temperature-sensitive products
These items are marked with the note "temperaturempfindlich" (temperature-sensitive) — for example, salami and bacon specialties from Falorni and Steiner, as well as Goufrais cocoa confectionery. In cooler weather, they can be sent by standard shipping. In warmer weather, we switch the shipping to express shipping with ice packs before checkout — in this case, this shipping method is the only option, and the corresponding shipping costs will be displayed at checkout.
Shipping days for refrigerated and temperature-sensitive orders
To prevent any package from remaining in a distribution center over the weekend or public holidays, we only ship refrigerated orders from Monday to Thursday. Orders placed after Thursday will generally not be shipped until the following Monday. In summer, this rule also applies to temperature-sensitive products.
Packaging
Depending on the manufacturer, sausage and cheese specialties are supplied either vacuum-packed or traditionally without foil — for example, Italian salami from Falorni. If air is visible in a vacuum package upon delivery, this is not a quality defect. Please unpack the item and store it in the refrigerator, ideally wrapped in sausage paper or greaseproof paper.
Freight Forwarding
Freight forwarding is used for products that cannot be delivered as a package due to their size or weight. The selection is made automatically before completing the order. Please provide your phone number for scheduling the freight forwarding delivery.

Currently, we only ship within Germany. Shipping to Austria is in preparation — as soon as we can deliver there, you will find the details here.
Products subject to excise duty (alcohol) cannot be shipped to Austria.
Alcohol
Alcohol can only be shipped to adults. The deliverer will verify age upon delivery. By ordering alcohol, you also confirm that you or the recipient are of legal age.
Shipping Service
For manual creation of shipping labels, we charge an additional €2.50 per shipping label in addition to the stated shipping costs. Please note that we cannot retrospectively combine orders that have already been placed.
Investigation of failed payments
For the investigation and refund of payments incorrectly made to us, we charge a processing fee of €5.00.
