He patented a mustard manufacturing process and modernized the recipe for the famous Dijon mustard. Recognition for the quality of his products quickly spread throughout Europe.

In 1937, his successors, the Boubli family, achieved a court victory, which ruled that Dijon mustard is not a designation of origin and that only mustard produced in Dijon may bear that name, but rather a manufacturing process, a defined recipe.
