Origin & Production Method

The oil comes from high-quality olive varieties from Puglia, traditionally hand-harvested between November and January. The rare Affiorato technique allows for particularly gentle processing: the best oil naturally separates and is collected without mechanical aids – for an unadulterated taste.

How the Affiorato method works:

The Affiorato technique is a traditional, very gentle method for producing extra virgin olive oil, which is rarely used today and is precisely why it is so special. After pressing the olives, the highest quality oil naturally floats to the surface of the olive pomace juice – similar to cream on milk. This oil is then skimmed off by hand without centrifugation or filtration. The Italian term "affiorare" literally means "to emerge" or "to come to the surface".

Why is this so special?

Since no machines separate the liquid in this method, the oil remains unfiltered, untreated, and particularly natural. The yield is very low, but the quality is all the higher. The Affiorato extra virgin olive oil is full of secondary plant compounds and natural aromas.

Gianni Calogiuri – known for the best Vincotto

The Calogiuri family is one of the oldest families in Lizzanello, a small town south of Lecce in Puglia. For over 500 years, they have been cooking Vincotto according to a secret recipe from 1825, which has since been passed down from generation to generation. Since 1993, it has been marketed internationally by Gianni Calogiuri. Today, Vincotto is exported to 40 countries and is particularly appreciated by Michelin-starred chefs for its very special aroma with subtle notes of spices, grapes, and plums, and its balanced acidity.
