The spicy sugo, which gets a pleasant saltiness and a slight spiciness from the pecorino, goes well with tubular pasta, such as penne, rigatoni, or paccheri. Nicola and Paola de Laurentis process these tomatoes in an artisanal way into delicious sugos.
