Chilli Sea Salt, Maldon's Pyramids with Double the Fire

Maldon Chilli Sea Salt combines the famous pyramid-shaped sea salt flakes from Essex with Aleppo pepper and Bird's Eye chilli. A chilli salt with two temperatures – first fruity warmth, then clear fire, in a 100-gram box.

Maldon Chilli Sea Salt is a chilli salt made from 94 percent original Maldon sea salt flakes, refined with 3 percent each of Aleppo pepper and Bird's Eye chilli. Two chillies, two roles: the Aleppo brings the fruity warmth of Levantine cuisine, the Bird's Eye the fast, clear fire of Southeast Asia.

First Crunch, Then Warmth, Then Fire

On the tongue, this chilli salt unfolds in three acts: First, the pyramid crunches salty and clear, then the raisin-fruity warmth of Aleppo pepper spreads, and finally, the Bird's Eye makes its appearance – direct, bright, but never brutal.

The spiciness thus remains a companion rather than the main actor, very British, so to speak. If you find pure chilli flakes too rough, here you get the elegant version: salt and spice in one go, finely dosed between thumb and forefinger.

The Aleppo pepper is the real discovery: appreciated in Syrian and Turkish cuisine for centuries, it tastes sunny of dried bell peppers and dark raisins, with only a gentle heat. The Bird's Eye provides the counterpoint – small, clear, and purposeful. Together, this creates a seasoning with a beginning, middle, and end.

Try It on Watermelon, Avocado, and Margarita Rim

The chilli salt can accompany the entire barbecue evening: steak, prawns, corn on the cob, halloumi – a pinch after cooking is enough. Scrambled eggs and avocado toast get character in the morning, baked potatoes and tomato soup depth in the evening.

However, its favourite role is in sweet and spicy combinations: on watermelon, mango, or pineapple, the salt awakens the fruit and the chillies make it interesting – and on the rim of a Margarita glass, it beats the classic salt rim by a long shot. Spicy, fruity, sassy: No more summer fits into a box. Dark chocolate also goes surprisingly well with a pinch – chilli and cocoa are old allies. Related seasoning ideas can be found under Herb and Spice Salts.

From Maldon, Where Pyramids Have Grown Since 1882

The base remains the original: seawater from the spring tides of the Blackwater Estuary in Essex, boiled in shallow pans, harvested by hand with long rakes – this is how the Osborne family has worked since 1882, now in its fourth generation under Steve Osborne.

For the chilli variant, the finished flakes are carefully combined with the two chilli varieties, so that each pinch carries both: the crunch of the pyramid and the warmth of the pods. The mixture is deliberately dosed sparingly – 94 to 6 is a ratio that seasons rather than overwhelms.

The chilli salt belongs to the brand's young Seasoned family, with which the Osbornes are gently sending their pyramids in new directions – first the smoke, now the spice. The base remains untouched, and that's precisely what makes it appealing: It tastes first of Maldon, then of chilli.

Thus, the 100-gram box is the latest character in a family that has been doing only one thing for over 140 years: salt flakes that chefs worldwide rely on. The pure original can be found in the classic box, the smoked sister in the Smoked Sea Salt – and everything from the manufacturer at Maldon Salt. England can be spicy too!

Maldon Seasalt
