Pimientos del Piquillo – Spanish Tapas

For La Cocina de Lola's Pimientos del Piquillo grilled peppers, Antonio Viani uses ripe and fully ripe red bell peppers, 8-10 cm long peppers from Lodosa, which are native to the Navarra region. They are first grilled, then hand-peeled, marinated with a little salt, and preserved in their own juice. Intensely red, triangular, with compact yet firm flesh. Their taste is sweet and complex due to the roasted notes from grilling. They are wonderful for stuffing, for example, with a fish farce. A canned product can hardly taste any fresher.
